Instant Pot Turtle Candy

Instant Pot or Crockpot Turtle Candy is an easy homemade candy recipe that is great for the holidays! The turtle candies are loaded with dark chocolate, white chocolate, pecans, and caramel. Be careful these are addictive!

Instant Pot Turtle Candy

Turtle candies are so tasty! They look super fancy and professional but they are so easy to make! These are much easier than dipped candies. You just use a cookie scoop and scoop the mixture onto parchment paper.

Using your Instant Pot as a double boiler is a great way to melt the chocolate and then keep it warm. The Instant Pot keeps the chocolate the PERFECT temperature the entire time that you are working with the chocolate. I think that it’s much easier to use than the stove top method or the microwave method because the Instant Pot is placed on the counter and your parchment or waxed paper is placed right next to it. This leads to much less mess and it’s very convenient.

Try these candies out this Christmas season! I think you’ll love them.

Ingredients/Substitution Ideas

  • Dark chocolate melts–I like the Ghirardelli brand. You can also use dark chocolate chips.
  • White chocolate melts–I like the Ghiradelli brand. You can also use white chocolate chips.
  • Pinch of kosher salt
  • Pecans
  • Werther’s Soft Caramels–these are a better size and better texture than Kraft caramels for these particular candies.

Steps

  1. Heat water in bottom of Instant Pot: Pour 2 cups of water into the bottom of your Instant Pot. Turn your Instant Pot to the saute setting adjust to “more.”
  2. Place a glass or metal bowl that sits in/on the Instant Pot without falling in on top of the Instant Pot.
  3. Add the dark chocolate, white chocolate and salt into bowl. Stir every few minutes until smooth and creamy and melted.
  4. Stir in the pecans. 
  5. Turn Instant Pot to keep warm setting. 
  6. Scoop a tablespoon of the chocolate mixture onto parchment lined baking sheet. Place a caramel on top. Then scoop another tablespoon of the chocolate mixture on top of the caramel to cover it. Repeat until all the chocolate has been used. 
  7. Refrigerate until set. Store in an airtight container. 

Notes/Tips

  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot. Whatever Instant Pot you have on hand will work as long as you have a bowl that will fit in the top.
  • I used a tablespoon cookie scooper*.
  • Store leftovers in an airtight container*. I like to package these up* and give them away as Christmas gifts.
  • Can I use milk chocolate instead of dark chocolate? Yes you can. I prefer dark chocolate but if you’d like you can use milk chocolate or a combination of dark and milk chocolate.
  • Can I Use Chocolate Chips? I used the Ghiradelli melting wafers that are made specific for melting and dipping. However you can use chocolate chips. I would suggest adding in 1 tablespoon of shortening or vegetable oil with the chips. This will give you the desirable glossy finish. Chips won’t look like they are melting because they are designed to hold their shape. So stir a lot. This time of year it’s easy to find melting chocolate and it is often on sale. This would be my preferred choice but in a pinch chips will work too.
  • How do you drizzle the white chocolate on top? Dip a fork into the bowl of melted chocolate. Raise the fork and work quickly to move the chocolate-dipped fork back and forth a few inches above the turtle candies to drizzle the top.

  1. Add pecans into bottom of slow cooker. Add in the dark chocolate, white chocolate and salt.
  2. Cover and cook on low for 1 hour. 
  3. Stir until smooth.
  4. Turn slow cooker to warm setting. 
  5. Scoop a tablespoon of the chocolate mixture onto parchment lined baking sheet. Place a caramel on top. Then scoop another tablespoon of the chocolate mixture on top of the caramel to cover it. Repeat until all the chocolate has been used. 
  6. Refrigerate until set. Store in an airtight container. 

Notes

If desired, you can melt some white chocolate and drizzle it over the top.

    This looks anwesome and I want to make it for the holidays. I see the recipe calls for dark chocolate, white chocolate, salt, etc. However, the written directions say to add the dark chocolate, milk chocolate into the bowl etc. Milk chocolate is not listed in the ingredient list and the white chocolate isn’t mentioned in the cooking instructions. I’m confused did I miss something?

      oops I just mistyped. I meant to say white chocolate not milk chocolate. I’ve corrected it.
