Tender Slow Cooker Mississippi Pot Roast

This 5-ingredient pot roast is a true dump-and-go slow cooker recipe! Just add everything to the crockpot, turn it on and walk away. The pepperoncinis and au jus give the beef the best tangy, savory and salty flavor. And as long as you give it enough time to cook, the beef gets so tender that it practically falls apart. Serve it over a big scoop of mashed potatoes with some of the yummy juices spooned over the top!

Ingredients/Substitution Ideas

  • Chuck roast
  • Au jus dry mix
  • Water
  • Sliced pepperoncinis with juice–mild banana peppers can be substituted for a slightly different flavor
  • Butter

Steps

Add roast into slow cooker. Sprinkle the roast with au just mix and pour in the water and pepperoncinis and juice. Add butter on top of the roast.

Cover and cook on low for 8-12 hours, or until roast is tender. The roast isn’t done until you can easily break it apart with a fork. Cooking time depends on the thickness of the roast and your individual slow cooker. 

Break the roast apart and serve with some of the juices and pepperoncinis from the slow cooker.

Notes/Tips

  • This would be so good over mashed potatoes, rice or egg noodles so you can take advantage of all those juices. Another option is to pile the shredded beef onto toasted rolls with provolone cheese and some of the pepperoncinis. You could serve some of the cooking liquid on the side for dipping.
  • Add green beans, roasted broccoli, carrots or a green salad on the side.
  • Chuck roast can actually seem tough if it hasn’t cooked long enough. If you try to shred it and it fights you, put the lid back on and give it another hour or two. It’s done when a fork easily pulls the meat apart. Eight to 12 hours is a big range, but roast thickness and slow cookers vary quite a bit. Start checking it around the 8-hour mark.
  • I used my 6 quart Crockpot. You can also use an 8 quart slow cooker.
  • Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze the shredded beef along with some of its juices in an airtight freezer container for up to about 3 months. Thaw overnight in the refrigerator before reheating.

Ingredients

  • 3 pounds chuck roast, trimmed of excess fat
  • 1 packet au jus dry mix
  • 1 cup water
  • 1/2 of a 16 ounce jar of sliced pepperoncini with juice
  • 2 Tbsp butter

Instructions

  1. Add roast into slow cooker. Sprinkle the roast with au jus mix and pour in the water and pepperoncinis and juice. Add butter on top of the roast.
  2. Cover and cook on low for 8-12 hours, or until roast is tender. The roast isn’t done until you can easily break it apart with a fork. Cooking time depends on the thickness of the roast and your individual slow cooker. 
  3. Break the roast apart and serve with some of the juices and pepperoncinis from the slow cooker. 

Instant Pot Instructions:

  1. Add roast into Instant Pot. Sprinkle the roast with au just mix and pour in the water and pepperoncinis and juice. Add butter on top of the roast.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 90 minutes. When time is up let pot sit for 15 minutes and then move valve to venting. 
  3. Break the roast apart and serve with some of the juices and pepperoncinis from the pot.
