Dump and Go chicken Taco Soup
After a day at the lake, we came home hungry! I threw a few things I had in my pantry and freezer into the Instant Pot, and this soup was the result. Luckily, I had all the yummy toppings on hand too, and Greg, Reagan, her boyfriend and I all agreed it was the perfect slurping soup to fill our empty tummies. These are my favorite kinds of meals…fast to get going, made with easy ingredients and everyone is happy. Enjoy!
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Taco seasoning–I used McCormicks brand
- Boneless skinless chicken thighs–boneless skinless chicken breasts will also work
- Petite diced tomatoes–or fire roasted tomatoes
- Black beans–pinto beans are a good substitute
- Corn–frozen corn can also be used
- Diced green chiles–use mild or hot depending on how much heat you like
- Optional Toppings
- Sour cream–plain Greek yogurt is another option
- Fritos–crushed tortilla chips work too
- Avocado–or guacamole
- Shredded cheddar cheese–Monterey Jack, Colby Jack or a Mexican cheese blend also works
Steps
Add broth, taco seasoning, chicken, tomatoes, beans, corn and green chiles to Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button (or low pressure) to 10 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
Remove the chicken and shred. Stir it back into the soup.


Ladle into bowls and top with desired toppings.

Notes/Tips
- This is really a complete meal on its own, but cornbread, cheese quesadillas or warm tortillas would be great alongside it.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- This soup can be gluten free if you use gluten free taco seasoning.
- You can make your own taco seasoning from scratch.
- You can substitute chicken breasts, but thighs are a little more forgiving and stay especially tender and juicy.
- This recipe has 4 cups of broth, so it will definitely have a soupier consistency. If you prefer a thicker, chunkier taco soup, try using 3 cups of broth.
- Don’t skip the toppings! Sour cream adds creaminess, avocado adds richness, cheese melts into the hot broth and Fritos give you that salty crunch. You can also try sliced green onions, cilantro, jalapeños, lime wedges or crushed tortilla chips.
- Store cooled leftovers in an airtight container in the refrigerator for 4 days. Keep the toppings separate. This soup should freeze really well since there’s no dairy in the soup itself. Freeze in individual containers for easy lunches, then thaw and reheat on the stove or in the microwave.

- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1 (4 oz) can diced green chiles
- Toppings: sour cream, Fritos, avocado, shredded cheddar cheese
Instructions
