Instant Pot Chantilly Potatoes

Chantilly potatoes are like a leveled up mashed potato. This is a French potato dish that is sophisticated yet quite effortless to make. When you eat these potatoes you will be shocked that they only have 5 simple ingredients. I couldn’t believe how awesome these potatoes were and I could not sneaking bite after bite. Next time you need an amazing side dish…make these potatoes!

If you know me you know that I love making potatoes in the Instant Pot. The Instant Pot is the perfect tool to make mashed potatoes. Instead of boiling your potatoes on the stove in several cups of water (picture the starchy water boiling over on your stovetop) you just need a cup of water in the bottom of your pot and a few minutes of pressure cooking time to get perfectly cooked potatoes. It is SO much easier and faster than boiling potatoes on the stove. I would get an Instant Pot JUST for cooking potatoes. It’s that much better. For reals.

Ingredients/Substitution Ideas

This recipe only has a few ingredients but it tastes so luxurious! Sometimes the best dishes are the simplest.

  • Russet potatoes–another option is to use buttery Yukon gold potatoes
  • Salt and pepper–I like kosher salt and fresh cracked pepper
  • Heavy cream
  • Swiss, gruyere or parmesan cheese

Steps

  1. Prepare Instant Pot: Pour 1 ½ cups of water into bottom of Instant Pot. You need some water in the pot to bring it to pressure.
  2. Steam potatoes: Place the cubed potatoes into a steamer basket. Drop the steamer basket into Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up move valve to venting and remove the lid. If you don’t have a steamer basket you can add the potatoes into the bottom of the pot with the water and pressure cook for 8 minutes instead of 10. The potatoes will be a little grainy but they’ll still turn out.
  3. Mash potatoes: Remove the steamer basket. Discard water in Instant Pot and dry out the pot. Add potatoes into Instant Pot. Mash the potatoes* until creamy. Stir in a large pinch of salt and pepper.
  4. Beat the cream: In a mixing bowl beat cream, with the electric mixer* on medium speed, to stiff peaks, about 2 minutes. Fold the parmesan cheese and a pinch of salt and pepper into the cream with a rubber spatula.
  5. Fold the mixture: Fold half of the cream mixture into the mashed potatoes and gently spread the potatoes on the bottom of the Instant Pot. Spread the remaining cream mixture over the potatoes.
  6. Air fry the top: Place air fryer lid* on top of pot and air fry at 400 degrees for 1-3 minutes, or until top is golden brown. Serve and enjoy! (If you don’t have an air fryer lid then you can scrape the mashed potatoes into a 9×9 inch baking dish. Instead of using the air fryer to brown the top use your oven’s broiler. Broil for about 1-3 minutes, watching closely so that it does not burn. You’ll want the top to be golden brown.)

Notes/Tips

  • I strongly suggest getting a steamer basket if you don’t already have one! I used it all the time for potatoes in the Instant Pot. I like this silicone steamer basket that I bought on Amazon*.
  • I used my 6 quart Duo Crisp Instant Pot with air fryer lid*. You can also make this in an 8 quart pot.
  • If you don’t have an air fryer lid then you can scrape the mashed potatoes into a 9×9 inch baking dish. Instead of using the air fryer to brown the top use your oven’s broiler. Broil for about 1-3 minutes, watching closely so that it does not burn. You’ll want the top to be golden brown.
  • Serve as a side dish to any dinner. These potatoes taste great with ham, steak, pork chops, chicken, etc. Serve with a side of green beans or asparagus.
  • If you’d like to make this low carb then use cauliflower florets instead of cubed potatoes.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
