Instant Pot Frugal Dude’s Supper
I don’t know about you but my grocery bill has seemed to skyrocket lately and I don’t like it. I rethink every item on my list wondering if I should really buy that item or not. It’s good for me to get back to shopping the sales, using coupons and making the trek to my trusty Winco (which definitely has the lowest prices for the items that I typically buy).
If you’re in the same boat (which I have a feeling you are) you may like this inexpensive but delicious dinner. You’ll start with a couple of onions and a package of smoked sausage. You can use any type of smoked sausage that you like. You can even use bratwurst. I used some turkey sausage that was on sale (2 packages for $5). Then you’ll add in a couple of bell peppers (whatever color you like), some Worcestershire and a can of tomato sauce. It’s a simple meal but it tastes really flavorful thanks to the sausage. You may like serving this over rice (I buy converted rice in the bulk bins at Winco) or over a toasted bun. Depending on if you shop sale items or not this dinner will be around than $7. Not bad!
Ingredients/Substitution Ideas
- Olive oil–or another type of oil
- Smoked sausage–turkey, beef or pork. You can also use bratwurst.
- Yellow onions
- Beef broth–or water and Better than Bouillon
- Bell peppers–color or your choice. I used one green and one yellow.
- Minced garlic–jarred or fresh
- Worcestershire sauce
- Garlic salt–garlic salt is simply 1 part garlic powder to 3 parts table salt. You can make your own if you’d like.
- Tomato sauce–or marinara sauce
Steps
- Brown sausage and sauté onions: Turn Instant Pot to sauté setting. When displays says HOT add in the olive oil and swirl it around. Add in the sausage and lightly brown for 2 minutes. Then add in the onions and sauté for 2 more minutes.
- Deglaze the pot: Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add ingredients: Dump in the peppers, garlic, Worcestershire and garlic salt.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up perform a quick release by moving the valve to venting. Remove the lid.
- Add remaining ingredients: Stir in the tomato sauce. Sprinkle in more garlic salt to taste.
- Serve: Scoop over toasted hero rolls or hot cooked rice. Serve and enjoy!
Notes/Tips
- Serve over toasted hero rolls (the addition of melty cheese would be amazing) or hot cooked rice. If you’d like you can serve alongside an extra side of vegetables like spinach or roasted broccoli.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- This recipe is gluten free (if you use gluten free Worcestershire sauce) and dairy free.
- To lower the sodium in the dish use a low sodium sausage and tomato sauce.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 Tbsp olive oil
- 1 (13 oz) package beef or turkey smoked sausage, sliced into quarter inch rounds
- 2 medium yellow onions, thinly sliced
- 1/2 cup beef broth
- 2 bell peppers, color or your choice
- 1 Tbsp minced garlic
- 1 Tbsp Worcestershire sauce
- 1/4 tsp garlic salt
- 1 (8 oz) can tomato sauce
Instructions

A word of wisdom – be careful when attempting to save money by selecting ground beef with a higher fat content or using sausage which also has a high fat content. You want to find alternatives that are also low in saturated fat and trans fat, or you could be exchanging saving money for an increase incidence of arteriosclerotic cardiovascular disease (ASCVD). Beans and rice combination is a “complete protein” like meat. Lentils are also a legume and have both protein and carbohydrates. Fish is an excellent source of protein, with salmon being “king” since it has a high Omega fatty acid content. Select the “wild caught” as opposed to “farm raised” fish which are over crowded and fed grains rather than their usual “food sources” from the ocean. Eggs with Omega Fatty acids are a great source of protein at a lower cost. Older methods of monitoring/checking for cholesterol content gave them a bad reputation. They also have heart healthy lethicin which can actually help lower cholesterol levels.
