A Cowboy’s Jambalaya (Instant Pot)–a colorful rice dish with beef smoked sausage, celery, green pepper, tomatoes and garlic. You’re going to love how flavorful and how easy this dinner is to make.

A Cowboy’s Jambalaya (Instant Pot)

This is a fast and easy one pot Instant Pot meal. It has great flavor thanks to the smoked sausage and Cajun seasoning. It’s not spicy but if you like heat you can always amp it up with extra hot sauce or crushed red pepper.

Ingredients/Substitution Ideas

  • Olive–or canola oil or vegetable oil
  • Celery
  • Onion–I used yellow
  • Beef smoked sausage–I sliced mine in half lengthwise and then cut into quarter inch slices
  • Minced garlic–fresh or jarred
  • Chicken broth–or water and Better than Bouillon
  • Converted/parboiled rice–or long grain white
  • Cajun seasoning–I just used the Kroger brand. Brands will vary in spiciness.
  • Pinch of crushed red pepper
  • Black pepper
  • Worcestershire sauce
  • Tabasco sauce–or another hot sauce
  • Petite diced tomatoes–or crushed tomatoes…fire roasted would be amazing
  • Green bell pepper–or another color of bell pepper you like

Steps

  • Sauté: Heat Instant Pot to sauté setting. When display says HOT add in the oil and swirl it around. Add in the celery and onion and sauté for about 4 minutes. Then add in the sausage and and garlic and sauté for about 1 minute. 
  • Deglaze: Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn sauté setting off. 
  • Layer in ingredients: Sprinkle in the rice, cajun seasoning, red pepper, Worcestershire, tabasco. Dump the tomatoes and green pepper on top. Don’t stir (this will help prevent the burn message).
  • Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let the pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  • Serve: Stir well. Season to taste and serve.

Notes/Tips

  • This is a one pot meal but you can serve it alongside some salad or collard greens and cornbread, if you’d like.
  • If you like heat then add in extra crushed red pepper and tabasco sauce.
  • To give it more of a cowboy flare add in a can of pinto beans or ranch style beans when you add in the tomatoes. 
  • I used my 6 quart Instant Pot*. You can also make this in 3 or 8 quart pot with no changes.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • This recipe can be gluten-free if you use gluten free broth and worcestershire sauce. This recipe is dairy free.
  • Other recipes you can make with *ingredient* are Instant Pot Spanish Rice With Beef and Instant Pot Sour Cream Taco Rice Bake. I buy it at Winco in the bulk bins or the Ben’s brand in the orange box. Don’t confuse it with minute rice.

Description

A colorful rice dish with beef smoked sausage, celery, green pepper, tomatoes and garlic. You’re going to love how flavorful and how easy this dinner is to make.


Ingredients

Scale
  • 2 Tbsp olive or canola oil
  • 2 ribs of celery, diced
  • 1 small onion, diced
  • 1 (12 oz) package beef smoked sausage, sliced into quarter inch pieces
  • 1 Tbsp minced garlic
  • 2 1/4 cups chicken broth
  • 1 1/2 cups converted/parboiled rice (or long grain white)
  • 1 Tbsp Cajun seasoning
  • Pinch of crushed red pepper
  • 1/4 tsp black pepper
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp Tabasco sauce
  • 1 (14.5 oz) can petite diced or crushed tomatoes
  • 1/2 of a green bell pepper, diced

    I’m always looking for inflation friendly recipes, this one hit the spot! So full of flavor. I didn’t have Tabasco on hand so I used a bit of cayenne pepper instead, the heat level was just right.

    I’ve been looking for a New Orleans inspired instant pot meal and so far this is the best I’ve tried. I must confess that I sauteed nothing – I executed this as a dump and go because I was in a hurry, and it cooked through fine.
