Instant Pot Cabbage and Brats

In Utah the 24th of July is a special holiday! It is called Pioneer Day and it’s in commemoration of when Brigham Young and the first group pioneers entered the Salt Lake valley in 1847. It’s a day to celebrate the character and bravery of the original settlers. Can you imagine rolling into a desert in 1847 and settling the land, planting crops and surviving? I’m in awe!

There is a hymn that commemorates the journey of the pioneers call Come Come Ye Saints. There is a line that says “all is well, all is well.” I think that’s the spirit of the pioneer. No matter what happens whether it be death, sickness, or hardship the end result would be “all is well” because of their faith.

To commemorate this holiday I tried to look up pioneer recipes. Mostly I found really gross sounding recipes because they just didn’t have access to many ingredients and what they did have was really basic and bland. I did find a spiced cabbage recipe from some of the pioneers that emigrated from Germany that sounded pretty tasty. Apparently it is a Christmas favorite. So maybe it’s something they would eat only on special occasions??

Of course my version is probably not close to what the pioneers would have eaten but let’s just pretend that it is for fun! Have a happy July 24th! If you live in Utah enjoy your day off of work!

Notes/Tips

  • Serve with a side of fresh bread or corn bread.
  • I used my 6 quart Instant Pot*. You can also make this in a 8 quart pot. Halve the recipe in the 3 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days. This recipe doesn’t freeze great.

Description

An easy Instant Pot one pot meal of cabbage and bratwurst that is very simple but tasty.


Ingredients

Scale
  • 1 tsp olive oil
  • 5 bratwurst sausages (this was a 16 ounce package), cut into 1 inch pieces
  • 1/2 cup beef broth
  • 1 onion, sliced
  • 1 medium potato, washed and cut into cubes
  • 6 cups chopped cabbage
  • 1 granny smith apple, peeled and cut into slices
  • 1 1/2 tsp balsamic vinegar, apple cider vinegar or white vinegar
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the oil and the brats. Brown for a couple minutes. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off sauté setting.
  2. Add in the onion, potato and cabbage. 
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  4. Stir in the apple, vinegar, salt and pepper. Taste test and add season to taste.

    This was FAST and yummy! I added garlic (because…garlic!) and chopped up mini carrots. It needed some color. I used stadium brats. It was perfect. My husband loved it.
