Holy Moly Casserole–Italian sausage, red potatoes, sweet corn, Rotel tomatoes, sour cream and cheddar make a flavorful dinner you will be wowed by! Make it fast in the Instant Pot.

Holy Moly Casserole

Holy moly! That was a phrase my dad used when I was growing up and I really never knew what it meant when I was little. Haha! Holy Moly soup is such a hit that I decided to take the flavors from the soup and make a one pot dish. You’re going to love the flavor! It’s so good. The key to this recipe is the Italian sausage. It just flavors everything so perfectly. So make sure you use a good quality sausage. Pile up your plate and you’re set. Enjoy!

Ingredients/Substitution Ideas

  • Italian sausage–I used mild
  • Dried minced onion–I buy the big container at Costco or Sams
  • Chicken broth–or Better than Bouillon chicken base
  • Red potatoes–or peeled Russet potatoes
  • Frozen sweet corn
  • Rotel–I used mild
  • Red pepper flakes
  • Sour cream
  • Sharp cheddar cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion. Brown for 5 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Evenly add in the potatoes and sprinkle with a pinch of salt. Dump the corn, Rotel and red pepper flakes on top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. remove the lid. 

Gently stir in the cheese and sour cream. 

Serve and enjoy!

Notes/Tips

  • Serve with a side of sauteed spinach or collard greens.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with frozen sweet corn are working girl casserole and Carolyn’s casserole.
  • Can I use ground beef instead of Italian sausage? You can, however you’ll need to spice it up a bit by seasoning the ground beef well since that is where a lot of the flavor in this dish comes from.
  • What is Rotel? Rotel is a brand of canned diced tomatoes and green chilies. It is found by the diced tomatoes at the grocery store. I usually buy mild but there are also original and spicy varieties.

Ingredients

  • 8 oz ground Italian sausage (I used mild)
  • 1 Tbsp dried onion
  • 1/2 cup chicken broth
  • 1 pound red potatoes, cut into 3/4 inch cubes
  • Pinch of salt
  • 1 cup frozen sweet corn
  • 1 (10 oz) can Rotel (I used mild)
  • Pinch of red pepper flakes
  • 1/2 cup sour cream
  • 1/2 cup shredded sharp cheddar cheese

Instructions

    Made this for lunch today and its sooooooooo wonderful.
    I did add extra 2 small potatoes and 1/4 cup extra broth, so I didn’t have any waist.
    I also didn’t add the sour cream and cheese to the pot, I added to the bowl when served.

      I was wondering the same thing I have a ninja foodi grill instead. I’ve seen a few other interesting recipes it’ll be nice if they gave alternative methods for making her recipes

      Hi Kimberly,
      I haven’t tried it but here’s how I would do it:
      Heat a pan over medium high heat. add in the sausage and break it up. Add in the onion. Brown for 5 minutes. Add to the slow cooker.
      Stir in the broth, potatoes and sprinkle with a pinch of salt. Stir in the corn, Rotel and red pepper flakes on top.
      Cover and cook on low for 3-4 hours or until potatoes are tender.
      Gently stir in the cheese and sour cream.
      Serve and enjoy!
