Description

Italian sausage, red potatoes, sweet corn, Rotel tomatoes, sour cream and cheddar make a flavorful dinner you will be wowed by! Make it fast in the Instant Pot.


Ingredients

  • 8 oz ground Italian sausage (I used mild)
  • 1 Tbsp dried onion
  • 1/2 cup chicken broth
  • 1 pound red potatoes, cut into 3/4 inch cubes
  • Pinch of salt
  • 1 cup frozen sweet corn
  • 1 (10 oz) can Rotel (I used mild)
  • Pinch of red pepper flakes
  • 1/2 cup sour cream
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion. Brown for 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Evenly add in the potatoes and sprinkle with a pinch of salt. Dump the corn, Rotel and red pepper flakes on top. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. remove the lid. 
  5. Gently stir in the cheese and sour cream. 
  6. Serve and enjoy!
