Holy Moly Soup–Instant Pot or Crockpot potato, cheese and sausage soup with tons of flavor!
Holy Moly Soup
Holy moly! This soup is good 🙂 You’re going to love the flavor from the sausage, the bites of potato, tomato and corn and the creaminess from the sour cream and the cheddar. It’s all so good. We had this for Sunday dinner with some cornbread and it was a major win. I think you’ll love this easy potato soup and you can make it in the Instant Pot or the slow cooker.
This recipe is adapted from Holy Moly Potato Soup on Taste of Home.
Ingredients/Substitution Ideas
- Jimmy Dean sausage–it’s in a roll by the other breakfast sausages. You can also use another brand but I like Jimmy Dean best.
- Dried onion–or a cup of diced fresh onion
- Chicken broth–or water and Better than Bouillon chicken base
- Red potatoes–or peeled russet potatoes
- Frozen sweet corn–or a can of corn
- Rotel diced tomatoes with green chiles–I like mild
- Red pepper flakes
- Black pepper
- Sour cream
- Shredded sharp cheddar cheese
Steps
Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Brown for about 5 minutes and drain off excess grease. Stir in the onion.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Dump in the potatoes, corn, Rotel, red pepper and black pepper.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
In a bowl stir the sour cream and 1 cup of the hot liquid together (to temper the sour cream).
Then stir the sour cream mixture into the soup. Stir the cheese into the soup.
Ladle into bowls and serve.
Notes/Tips
- Serve with cornbread and honey butter.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days.
- Other recipes you can make with red potatoes are sinful potatoes and Missouri casserole.
- If you like spice then use original Rotel and use a spicy Italian sausage in the place of regular sausage.
- This recipe is gluten-free.
- Try adding in some chopped spinach or kale into the soup to add some greens.

We’re having our beautiful Easter weather, warm days, cool nights & this was a perfect soup for last night’s dinner. So very delicious & EZ to throw together. Thanks for another great one.
P.S. Jimmy Dean rocks!
Karen says
I agree with good ol’ Jimmy! he’s the best 😉
Judy Arellano says
can you freeze this? .
Kim B. says
Judy, I’m not sure, sorry. Dairy does funky stuff sometimes when you thaw & reheat. (I never have enough left to freeze after we eat & send the rest to hubby’s parents up the road.)
I’ll bet Karen will know.
I do know this, it tastes really good!
Chris D. says
This was very good. I didn’t have sausage, so I substituted turkey kielbasa.
I’ll make it again..
Karen says
That sounds like a great substitution idea 🙂
Monica R Batts says
Made this last night and it was delicious! Husband raved about it! I did change my ingredients just a little: used hot and spicy breakfast sausage, added Velveeta to the recipe, and made my own rotel by adding sautéed jalapeños and onions to a can of regular diced tomatoes. Served mine with jalapeño cheddar biscuits. Definitely making again!!
Monica R Batts says
Also, meant to add that I made mine on the stove in a soup pot.
Karen says
Wow your version sounds even better! I love those ideas.

Can you please include Potassium in the nutritional facts? Made this tonight with Vegan Gimme Lean sausage, added an onion and 5 garlic cloves, added 1 can of diced tomatoes undrained, and served the Rotel, cheese and sour cream on the side for those that wanted that…it honestly did not need any of them, it was SO GOOD!!!!!!!
Barbara Zimmerman says
would also like potassium included
Karen says
So glad you liked it! I am curious why is potassium important for you to know about? I just corrected the recipe nutrition label to include it.
