Working Girl Casserole

Today’s recipe is a delicious meat and potatoes slow cooker recipe (you can also use the slow cooker setting on your Instant Pot). It came together quickly and my family loved it so much scraping the crock clean. There will be even less dishes and prep time if you’re lucky enough to have a slow cooker* that has a saute or stovetop function on it! The recipe idea came from a funny cookbook called Sinkin Spells, Hot Flashes, Fits and Cravins by Ernest Matthew Mickler. Enjoy this easy and delicious dinner!

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7. Ground turkey can also be used.
  • Onion–yellow, white
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • Russet potatoes–or red potatoes
  • Frozen sweet corn
  • Ketchup–Heinz
  • Cheddar cheese–I like sharp

Steps

Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion, kosher salt, pepper, garlic powder and smoked paprika. Brown for about 5 minutes. Transfer to the slow cooker.

Stir in the potatoes, corn and ketchup.

Cover and cook on low for 3-4 hours. 

Sprinkle the cheese on top and let it melt. Salt and pepper to taste. Serve and enjoy!

Notes/Tips

  • Serve with greens like spinach, collard greens or salad and some cornbread or homemade biscuits.
  • I used my 6 quart Ninja slow cooker. I like this slow cooker because it has a stovetop function on it. This means I can do my sauteing browning steps inside the slow cooker. You can also make this in a 3 or 8 quart slow cooker.
  • This recipe is gluten-free.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

An easy slow cooker recipe with beef, potatoes, sweet corn and cheese.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 1/2 pounds russet potatoes, peeled and cut into 1 inch cubes
  • 1 1/2 cups frozen sweet corn
  • 1/4 cup ketchup
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion, kosher salt, pepper, garlic powder and smoked paprika. Brown for about 5 minutes. Transfer to the slow cooker.
  2. Stir in the potatoes, corn and ketchup.
  3. Cover and cook on low for 3-4 hours. 
  4. Sprinkle the cheese on top and let it melt. Salt and pepper to taste. Serve and enjoy!

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, kosher salt, pepper, garlic powder and smoked paprika. Brown for about 5 minutes. Turn off Instant Pot.
  2. Stir in the potatoes, corn and ketchup.
  3. Cover Instant Pot with lid. Turn Instant Pot to the slow cook setting on “more” and cook for 3-4 hours, or until potatoes are tender.
  4. Sprinkle the cheese on top and let it melt. Salt and pepper to taste. Serve and enjoy!

    I tried this with a regular slow cooker and the potatoes were still rock hard after 4 hours on low. I feel like I am missing something. Is there supposed to be additional liquid added?

    Didn’t realize the Instant pot settings were for slow cook when I started this meal at 5 pm. So I added a cup of broth and pressure cooked for 3 minutes. Turned out awesome and tasty.

      Step 3.
      Cover Instant Pot with lid. Turn Instant Pot to the slow cook setting on “more” and cook for 3-4 hours, or until potatoes are tender.

      it’s the slow cooker setting in the instant pot so you don’t pressure cook it but slow cook it
