In N Out Casserole

This dinner is like a burger in a bowl. Don’t forget the In N Out special sauce made from scratch! It is the key to this dinner. My family ate this until the pot was scraped clean. There’s just something about beef and potatoes that everyone loves. And the pickles just bring everything together.

Ingredients/Substitution Ideas

  • Lean ground beef–93/7
  • Dried minced onion
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Beef broth–or water and Better than Bouillon
  • Russet potatoes–or red potatoes
  • Tomato sauce
  • Yellow mustard
  • Mayo
  • Ketchup
  • Dill pickles
  • Pickle juice
  • Optional toppings: shredded cheddar, diced tomatoes, diced pickles

Steps

Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease. Stir in ½ tsp of salt, pepper and garlic powder.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Dump in the potatoes. Sprinkle the potatoes with the remaining ½ tsp of salt. Dump in the tomato sauce and mustard. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move the valve to venting and remove the lid. Gently stir.

Combine the sauce ingredients in a small bowl. Stir.

Scoop a serving of the meat and potatoes onto a plate and drizzle with a bit of the sauce. Top with some shredded cheddar and diced tomatoes and chopped pickles. Enjoy!

Notes/Tips

  • Serve with some shredded lettuce on the side.
  • This recipe is gluten free.
  • If you’re serving someone who is trying to eat low carb then you can leave out the potatoes and use cauliflower florets instead.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot. This recipe can easily be doubled.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with pickles are dill pickle pasta salad and what’s the dill soup.
  • This recipe has been adapted from Clean Monday Meals.

Ingredients

Scale
  • 1 pound lean ground beef
  • 2 Tbsp dried minced onion
  • 1 tsp kosher salt, divided
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 cup beef broth
  • 2 medium Russet potatoes, peeled and cut into half inch cubes
  • 1 (8 oz) can tomato sauce
  • 1 Tbsp yellow mustard
  • Optional toppings: shredded cheddar, diced tomatoes, diced pickles

Sauce:

  • 2 Tbsp mayo
  • 2 Tbsp ketchup
  • 2 Tbsp diced dill pickles
  • 1 tsp pickle juice
  • 1/2 tsp dry minced onion
