Piggy Bank Casserole

Cha-ching! This piggy bank casserole is a vault of flavors! The look of the sliced smoked sausage reminds me of copper pennies. But to tell you the truth I’d rather have this dinner than a piggy bank full of pennies 😉 It may seem like a random assortment of ingredients but everything goes really well together and tastes great. Our pot was scraped clean…no leftovers in sight. Enjoy!

Ingredients/Substitution Ideas

  • Olive oil–or canola, vegetable oil
  • Beef smoked sausage–or kielbasa
  • Onion–yellow, white
  • Chicken or beef broth–or water and Better than Bouillon
  • Russet potatoes–or red, yukon gold
  • Garlic powder
  • Cumin
  • Oregano
  • Chili powder
  • Black pepper
  • Kosher salt
  • Diced green chiles–I used mild
  • Petite diced tomatoes–or crushed
  • Cream cheese
  • Spinach–fresh or frozen
  • Gruyere cheese–or parmesan, monterey jack

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for about 3 minutes. Add in the onion and saute for 3 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Evenly add in the potatoes. Season the potatoes with garlic powder, cumin, oregano, chili powder, pepper and salt. Dump the green chiles, tomatoes and cream cheese on top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the spinach and cheese.

Serve and enjoy!

Notes/Tips

  • Serve with a side salad, corn on the cob or a fruit salad.
  • This recipe is gluten free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
  • 1 cup diced onion
  • 1/2 cup chicken or beef broth
  • 1 1/2 pounds Russet potatoes, peeled and cubed
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/4 tsp oregano
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • 1/2 tsp kosher salt
  • 1 (4 oz) can diced green chiles
  • 1 (14.5 oz) can petite diced tomatoes
  • 2 ounces cream cheese
  • 2 cups chopped spinach
  • 1/2 cup shredded gruyere cheese

Instructions

  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir in the spinach and cheese. Serve and enjoy!

    Do you think this would still be as good if I left the cream cheese out? My kids are not fans of cream cheese.
