Cheesy Chicken, Onion and Chive Potato Casserole (Instant Pot)

Greg suggested I call this recipe “google casserole” because once you make it you won’t need to be searching the internet for a casserole recipe. You’ll come back to this one time and time again. This casserole only has 6 ingredients. It uses rotisserie chicken which tastes awesome and helps this casserole come together super fast! Kids and adults both love this sour cream, potatoes and chicken casserole.

Ingredients/Substitution Ideas

  • Russet potatoes–or red potatoes (with the peels on)
  • Package dry onion dip mix–not to be confused with onion soup mix. If you’d rather, you can use dry ranch dressing mix instead of onion dip mix.
  • Rotisserie chicken–pick one or two up at Costco next time you go. They are only $5 and you can get so much delicious meat off of them to use in recipes like this.
  • Bacon crumbles–fry up bacon or use the packaged crumbles
  • Sour cream–I used full fat
  • Shredded white cheddar–or yellow cheddar cheese…sharp has a lot of flavor.
  • Chives–or green onions

Steps

  • Prepare potatoes: Pour 1 ½ cups of water into bottom of Instant Pot. Add cubed potatoes to a steamer basket. Drop the basket into the Instant Pot.
  • Pressure cook potatoes: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid.
  • Move the steamer basket out of the pot and set aside. Discard the water and dry out the pot.
  • Add ingredients together: Add potatoes, onion dip mix, rotisserie chicken, bacon, sour cream and half of the cheese into the Instant Pot. Stir gently to coat the potatoes. 
  • If you have an air fryer lid: sprinkle the rest of the cheese on top. Bake at 350 for 2-3 minutes with your air fryer lid. If you want to use the oven: scrape the mixture into an 8×8 inch baking dish and bake at 350 for 10 minutes. 
  • Serve: Top with chives. Serve and enjoy!

Notes/Tips

  • If you don’t have rotisserie chicken on hand then you can make your own cooked and seasoned chicken and use it in recipes like this one. I love my basic seasoned, shredded chicken recipe.
  • This casserole tastes great served with broccoli (steamed or roasted). If I had it my way I would have added it in with the casserole! Alas, someone in my household is not okay with that.
  • I used my 6 quart Instant Pot Duo Crisp*.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • This recipe can be gluten-free if you use a gluten free onion dip.
  • Other recipes you can make with rotisserie chicken are Costco Casserole and Chicken Ranch Mac & Cheese.

Ingredients

  • 1 1/2 pounds Russet potatoes, peeled and cubed
  • 1 (1.34 oz) package dry onion dip mix
  • 3 cups rotisserie chicken, chopped
  • 1/2 cup bacon crumbles
  • 1 cup sour cream
  • 1 1/2 cups shredded white or yellow cheddar cheese
  • Chives, if desired

    What if I don’t have a steamer basket for my instant pot? How else can I cook the potatoes?

      You can cook directly in the water. I might cut cooking time down to 2 minutes though.

    Think you could cook some chicken breasts with the potatoes all at once? Or layered somehow?

      You could cut up some raw chicken into bite size pieces and cook it in the bottom of the steamer basket and put the potatoes on top.

    If you did want to add broccoli to the pot, how much would you add, and would you use fresh or would you use frozen?

      I would add in cooked broccoli (either from fresh or frozen) in with step 4.

    Recipe sounds delicious . BUT rotisserie chicken is $8.99 here for a small 3 pound bird. , I think I will just use leftover chicken when I try this recipe, Thank you for your wonderful recipes, I enjoy and try most of them
