Instant Pot Chicken Gravy with Homemade Noodles
Chicken and noodles over mashed potatoes can be found at country diners across America or in Grandma’s kitchen. This meal is a carb lovers dream! Noodles or potatoes? Now you don’t have to choose because both of them are included in this dinner!
Homemade egg noodles are surprisingly easy to make! With only flour, eggs, water and salt you make a dough, pat it out flat and use a pizza slicer to cut the dough into strips. So fun and satisfying to make food from scratch! You can also use packaged egg noodles if you want to skip this part.
The Instant Pot will help you cook all parts of this recipe…the gravy, the chicken, the mashed potatoes and the noodles. If you choose, you can forego the mashed potatoes but I think you’ll really appreciate the recipe as it is written. Give it a shot!
Ingredients/Substitution Ideas
- Better than Bouillon Chicken Base–to give the gravy good flavor
- Boneless, skinless chicken breasts and/or thighs–I like a combination of the two. Frozen is fine (same cooking time).
- Poultry seasoning-or you can make your own
- Salt and pepper–I like kosher salt and fresh cracked pepper
- Milk–or evaporated milk
- Cornstarch–to thicken the gravy
- Russet potatoes–or red potatoes or yukon gold potatoes
- Butter–for creamy, dreamy mashed potatoes
- All purpose flour–to make the homemade noodles
- Eggs–to bind the noodles together
Steps
There are 3 parts to this recipe. The gravy, the mashed potatoes and the homemade noodles. It isn’t a hard recipe to make but there are a few steps involved.
- Cook the chicken and potatoes at the same time. Do this by placing a tall trivet into the Instant Pot above the chicken and placing potato halves on top of it. The potatoes will get perfectly cooked to make mashed potatoes by the time the chicken is cooked. You can use fresh or frozen chicken.
- Make the homemade noodles. It’s not hard! And it’s actually quite fun. All you need is flour, water, eggs and salt. You’ll make a dough and then slice the dough into noodles with a pizza cutter.
- Mash the potatoes. After the cooking time is up you can move the potatoes to a bowl, mash them and add in milk, butter and salt and pepper.
- Pressure cook the homemade noodles. Before you cook the noodles you’ll move the chicken out of the pot and place it on a cutting board to chop. You’ll add the noodles into the broth in the pot and pressure cook for just 4 minutes. Don’t use a quick release because foam will escape from the valve and make a big mess.
- Thicken the gravy. Use a cornstarch slurry to thicken the gravy. You’ll want to season the gravy to taste with salt and pepper. Mine needed quite a bit. You can also add in extra Better than Bouillon if you’d like.
- Serve. Scoop potatoes onto a plate. Cover the potatoes with a big scoop of gravy, chicken and noodles. Eat and enjoy!
Notes/Tips
- Serve with sweet corn and some broccoli for a full meal.
- I used my 6 quart Instant Pot* but you can also make this in an 8 quart pot.
- If you don’t want to make homemade noodles you can add in 8 ounces of packaged egg noodles and pressure cook for 3 minutes.
- A tall trivet* is great for cooking the potatoes on top of.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients
For the chicken and gravy:
- 3 cups water
- 4 tsp Better than Bouillon Chicken Base
- 1 pound boneless, skinless chicken breasts and/or thighs
- 1 tsp poultry seasoning
- Salt and pepper
- 1 1/2 cups milk (warmed)
- 3 Tbsp cornstarch
For the potatoes:
- 2 pounds peeled and halved Russet potatoes
- 1/4 cup melted butter
- 1/4 cup milk
- Salt and pepper
For the noodles:
- 2 cups all purpose flour
- 3 egg yolks
- 1 egg
- 1/2 cup water
- 1/2 tsp salt
Instructions
- Add water, Better than Bouillon, chicken, poultry seasoning to Instant Pot.
- Place a tall trivet into the pot, moving chicken as necessary to place it firmly in the pot. Place the potatoes on top of the trivet. Be careful to not let them fall through the trivet.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes for frozen chicken or 10 minutes for fresh chicken. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid.
- While chicken is cooking make the noodles. Add flour and salt to a mixing bowl. Make a well in the middle. Add the egg yolks and egg into the well. Drizzle in the ½ cup of water. Start stirring with a spoon. Once dry ingredients are moistened use your hands to press the dough into a ball. Flour your counter and place the dough ball on the counter. Use a rolling pin or your palms to flatten out the dough about a quarter inch thick or less. Use a pizza cutter to cut the dough into small noodles about a quarter inch wide and two inches long.
- Use tongs to place potatoes in a bowl. Set aside. Move the trivet out of the pot.
- Move the chicken out of the pot and place on a cutting board. Chop.
- Add the noodles into the pot so they are submerged in the broth. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let the pot sit for 5 minutes before moving the valve to venting. Remove the lid.
- Stir in the chopped chicken. Make a cornstarch slurry by stirring the cornstarch and milk together. Stir the slurry into the pot. Turn Instant Pot to sauté setting. Stir until gravy has thickened. Add plenty of salt and pepper to taste.
- Mash* the potatoes. Add in the butter, milk and salt and pepper to taste.
- Scoop potatoes onto a plate. Cover the potatoes with a big scoop of gravy, chicken and noodles. Eat and enjoy!

Just a few steps to a lovely meal. It heats up perfectly the next day for lunch. That’s if there’s leftovers! Which doesn’t last in my family when Chicken Dumplings or Potatoe Dumplings is made!
