Description

An easy sheet pan meal recipe with sweet potatoes, zucchini, peppers, tomatoes and smoky sausage roasted together for a colorful meal.


Ingredients

Scale
  • 16 oz sweet potatoes, peeled and cut into 1 inch chunks
  • 1 large carrot, peeled and cut into 1/4 inch rounds
  • 1 medium zucchini, sliced in half lengthwise and cut into 1 inch pieces
  • 1 yellow bell pepper, cored and sliced into strips
  • 1 cup grape tomatoes, halved
  • 2 Tbsp olive oil
  • Pinch of kosher salt
  • 2 tsp Dash seasoning
  • 12 oz beef smoked sausage, sliced into quarter inch rounds
  • Parmesan cheese, for topping

Instructions

  1. Heat oven to 400° F.
  2. Prepare all the vegetables and place them on a sheet pan.
  3. Drizzle with the oil and season the veggies with a couple pinches of kosher salt.
  4. Add in the sausage and then sprinkle on the Dash seasoning and toss well.
  5. Cook in the oven for 30 minutes, tossing everything half way through. 
  6. Serve topped with parmesan cheese and enjoy!
