Exhausted Mom Casserole–a super fast and easy, dump and go Instant Pot one pot meal with potatoes, chicken and vegetables. Perfect for those nights when you’re too tired to cook!

Exhausted Mom Casserole

I got you girl. I know you’re tired. Making dinner everyday gets old. This recipe is a dump and press start recipe and it has protein, vegetables and carbs in it. All the things in one pot. It tastes pretty awesome too. Kids and adults will both eat this one happily. The hardest part of this recipe is cutting up the potatoes (don’t worry you don’t need to peel them). After that it’s smooth sailing!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon
  • Cooked, chopped chicken–I used Costco rotisserie chicken. You can also use this recipe.
  • Red potatoes–or russet potatoes peeled and cut into cubes
  • Frozen vegetables–I used broccoli, cauliflower and carrot mix
  • Bertolli garlic alfredo sauce–or a can of cream of chicken soup
  • Dijon mustard
  • Lemon juice
  • Salt and pepper

Steps

Pour broth into Instant Pot. Add in the cooked chicken.

Then layer in the potatoes, vegetables, alfredo sauce, dijon and lemon juice. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid.

Stir. Salt and pepper to taste. Serve and enjoy!

Notes/Tips

  • We served this as a one pot meal but if you’d like a side dish consider cornbread, fresh fruit or a side salad.
  • This recipe can be gluten free if you use gluten free alfredo sauce.
  • Try adding in a bit of parmesan cheese at the end or sprinkle each portion with a bit of cheese.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

A super fast and easy, dump and go Instant Pot one pot meal with potatoes, chicken and vegetables. Perfect for those nights when you’re too tired to cook!


Ingredients

Scale
  • 1/2 cup chicken broth
  • 2 cups cooked, chopped chicken
  • 1 1/2 pound red potatoes, cut into half inch cubes
  • 1 (12 oz) bag frozen vegetables (I used broccoli, cauliflower and carrot mix)
  • 1 cup Bertolli garlic alfredo sauce
  • 1 Tbsp dijon mustard
  • 1 Tbsp lemon juice
  • Salt and pepper

Instructions

Instant Pot Instructions:

  1. Pour broth into Instant Pot. Add in the cooked chicken. Then layer in the potatoes, vegetables, alfredo sauce, dijon and lemon juice. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid.
  3. Stir. Salt and pepper to taste (I added two big pinches). Serve and enjoy!

Slow Cooker Instructions:

  1. Add broth, chicken, potatoes, vegetables, alfredo sauce, dijon and lemon juice into slow cooker and stir. 
  2. Cover and cook on low for 3-4 hours, or until potatoes are cooked through.
  3. Stir. Salt and pepper to taste. Serve and enjoy!

    Can I use raw chicken breast?

      You can but you will need to cut it up into bite size cubes before adding it into the pot.

    I have to say… this is one of my family’s favorite meals… Yes, it’s easy to throw together but it’s very flavorful. At least to my family, it is. I’ve made this at least 3 times in the past 6 weeks. I’ve used yellow potatoes and red, chopped chicken, shredded, and rotisserie…. they all work wonderfully. I’ve made several of your recipes Karen and enjoyed all of them very much and it makes me love my Instant Pot knowing I can cook a meal without worry and my family will enjoy it! THANK YOU for sharing your recipes and how-to’s with us! 🙂
