Denver Casserole

Today’s recipe is a yummy potato dinner that comes together super fast. Just a bit of sauteing and slicing and you’re on your way with a quick 1 minute pressure cook time. My family is always a fan of potato recipes (as am I) so this was well liked.

This recipe was adapted from Denver Potato Casserole on Food.com. I am not sure why it is called Denver casserole…I’m wondering if it has something to do with the fact that a denver omelet has ham, bell pepper and onions in it?

Ingredients/Substitution Ideas

  • Butter–or oil
  • Onion–or shallot
  • Red bell pepper–or green
  • Chicken broth–or water and Better than Bouillon chicken base
  • Russet potatoes–or red potatoes
  • Kosher salt
  • Black pepper
  • Dried rosemary
  • Dried thyme
  • Garlic powder
  • Smoked paprika
  • Ham cubes–or smoked sausage
  • Colby jack cheese–or pepper jack, monterey jack, cheddar

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onions and peppers and saute for 3 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add the potatoes evenly into the pot (try not to stack potatoes directly on top of each other). Sprinkle the potatoes with salt, pepper, rosemary, thyme, garlic powder and smoke paprika.

Add the ham on top of the potatoes. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid. 

Gently stir in the cheese.

Serve and enjoy!

Notes/Tips

  • Serve with steamed broccoli, green beans or asparagus.
  • Can I add in other veggies? Yes, try mushrooms, spinach or corn.
  • This recipe is gluten free.
  • I love using this paring knife* for slicing the potatoes.
  • What does it mean not to stack the potatoes directly on top of each other? Try to arrange the slices in layers with a bit of overlap so steam can circulate. It’s okay if they touch but just avoid big thick piles.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • One minute seems too short, will the potatoes be cooked? The Instant Pot builds pressure while cooking, so the potatoes actually steam during that time. They’ll be tender after the quick cook and release.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

A fast and easy Instant Pot dinner of potatoes, ham, peppers and cheese.


Ingredients

  • 2 Tbsp butter
  • 1/2 cup diced onion
  • 1/2 of a red bell pepper, diced
  • 1/2 cup chicken broth
  • 18 ounces Russet potatoes, peeled and sliced into 1/4 inch rounds
  • 1/2 tsp kosher salt

  • 3/4 cup shredded colby monterey jack cheese

      yep! because the potatoes are thinly sliced they don’t take very much time to cook.

    Karen, my husband will love this, can’t wait to try it. Got a small problem, my right hand is in a cast and hubby gonna have to help. There’s no way I’ll get him to peel & slice a potato! Will have to cube them, hope that’ll work. How long to cook that way? Thanks.

        Thanks! Don’t know how I did it but popped a tendon on top part of my right thumb. Yes, ouch! Had to have surgery to repair it. Bummer. Will be back with stars when I can get him in chopping mode….or when he gets hungry enough…whichever comes first. ;-}
