New Year’s Good Fortune Soup–a super flavorful soup with black eyed peas, ham and collard greens that can be made in the Instant Pot or Crockpot. A perfect way to ring in the new year.

New Year's Good Fortune Soup

New Year’s Good Fortune Soup

Black-eyed peas are considered a symbol of good fortune and prosperity and it is tradition to eat them at New Years for good luck. Collard greens are often included in the tradition too as they represent green paper money. Today’s recipe includes both black eyed peas and collard greens in a super delicious soup. I loved this soup so much! It has a ton of flavor thanks to the salty ham and the chipotle chiles in adobo. I would gladly eat this soup for new years and any other day of the year too! I think you’ll love it. Serve it alongside a hunk of cornbread.

Ingredients/Substitution Ideas

  • Bacon grease
  • Onion
  • Garlic
  • Chicken broth–or water and Better than Bouillon chicken base
  • Carrot
  • Ham cubes–or smoked sausage
  • Apple cider vinegar
  • Rotel–I used mild
  • Dried thyme leaves
  • Black eyed peas
  • Collard green leaves–you can also use frozen
  • Chipotle chiles in adobo sauce*–these are essential to the flavor of the recipe

Steps

Turn Instant Pot to saute setting. When display says HOT add in the bacon grease and onions. Saute for 4 minutes. Stir in the garlic and saute for 30 seconds. Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the carrot, ham, vinegar, Rotel, thyme, black eyed peas, collard greens and chiles. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes (if you don’t have a soup button use low pressure for 10 minutes). When time is up let pot sit for 10 minutes and then move valve to venting. 

Ladle into bowls and serve.

Save leftover chipotles in the freezer for another day.

Notes/Tips

  • Serve with cornbread, dinner rolls, breadsticks or French bread.
  • When I cook bacon I save the bacon grease in a container and freeze. Then when I need it for recipes like this one I have it ready to go. The other option is to buy a product like Bacon Up at your grocery store.
  • You can find chipotle chiles in adobo in the international or Latin foods aisle of most grocery stores. Since this recipe will only use less than half a can you can freeze the remaining chiles and sauce in portions for later use.
  • You can use dried black eyed peas if you prefer. But you’ll need to cook them first. Add 1/2 cup of rinsed peas into Instant Pot with 2 cups of water and a pinch of salt. Pressure cook for 15 minutes (if they have been soaked you only need to pressure cook for 8 minutes). Allow a natural release for 10 minutes. Then drain off the liquid and use in the recipe.
  • This recipe is gluten free and dairy free.
  • This recipe can easily be doubled to feed a crowd.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 1 Tbsp bacon grease
  • 1/2 cup diced onion
  • 6 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 large carrot, peeled and sliced
  • 8 ounces ham cubes
  • 2 tsp apple cider vinegar
  • 1 (10 oz) can Rotel (I used mild)
  • 1/2 tsp dried thyme leaves
  • 1 (15 oz) can black eyed peas, rinsed and drained
  • 3 collard green leaves, stems removed and chopped
  • 2 chipotle chiles in adobo sauce*, chopped

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the bacon grease and onions. Saute for 4 minutes. Stir in the garlic and saute for 30 seconds. Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  2. Add in the carrot, ham, vinegar, Rotel, thyme, black eyed peas, collard greens and chiles.

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the bacon grease and onions. Saute for 4 minutes. Stir in the garlic and saute for 30 seconds. Transfer to the slow cooker.
  2. Stir in the broth, carrot, ham, vinegar, Rotel, thyme, black eyed peas, collard greens and chiles. 
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours
  4. Ladle into bowls and serve.
