This dinner is a guaranteed crowd pleaser! With bacon, cheese, potatoes, ham and ranch? No one’s turning that down! It’s an easy casserole that includes protein, carbs and veggies in one pan. The Instant Pot is a big helper with this recipe…It is used in this recipe to quickly and efficiently cook the potatoes and green beans (just a 4 minute pressure cook time). There is no babysitting a boiling pot. Just set it and let it do its thing while you crisp up the bacon and prep the creamy sauce. If you don’t have an Instant Pot you can still make this recipe. Just cook the potatoes and green beans on the stove until tender.

Ingredients/Substitution Ideas

  • Red potatoes–or peeled Russet potatoes
  • Fresh green beans
  • Thick cut bacon
  • Sour cream
  • Cream cheese
  • Dry ranch dressing mix–I like Hidden Valley brand and I buy the big container from Costco.
  • Garlic powder
  • Black pepper
  • Smoked paprika
  • Dried chives
  • Cubed ham
  • Frozen sweet corn
  • Cheddar cheese–I like sharp

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Place the potatoes and green beans into a steamer basket and drop the basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid. Move steamer basket out of pot and set aside. Discard the water. 

While the potatoes are steaming cook the bacon. I used my air fryer* to cook the bacon until crispy. Set on a paper towel lined plate, crumble and set aside. 

In a bowl mix together the sour cream, cream cheese, ranch dressing mix, garlic powder, black pepper, smoked paprika and chives. 

Add the potatoes into Instant Pot fold in the creamy mixture, ham and corn.

Heat oven to 375° F. Spread the mixture into a 9×13 inch baking dish. Sprinkle with the bacon crumbles and cheese. Bake for 20-30 minutes. 

Serve and enjoy!

Notes/Tips

  • This is pretty much a one pot meal but if you want a side consider serving with a fruit salad.
  • One-Pot Method: If you don’t want to bake it, just stir in the cheese and bacon while the potatoes are hot, cover the pot for a few minutes on the keep warm setting, and let everything melt together.
  • This recipe is gluten free.
  • I used my 6 quart Instant Pot* with my silicone steamer basket*.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 2 pounds red potatoes, cut into 1/2 inch cubes
  • 1 cup fresh green beans, cut into 1 inch pieces
  • 6 slices of thick cut bacon
  • 1/2 cup sour cream
  • 2 ounces cream cheese
  • 3 Tbsp dry ranch dressing mix
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • Dash of smoked paprika
  • 1 Tbsp dried chives
  • 8 ounce cubed ham
  • 1 cup frozen sweet corn
  • 1 cup shredded cheddar cheese
