Emotional Support Casserole

I read a funny article that explained how Chrissy Teigen “brought an emotional support scalloped potato casserole onto an American Airlines flight with her.” She asks via twitter, “If I don’t have a carry-on, can I bring a large ceramic casserole dish of scalloped potatoes on the plane? I am not kidding, is this okay? Is it too blunt/heavy an object? I’ll cry if they throw it away.” I wouldn’t blame her for crying! Sometimes you just need a comfort food casserole of scalloped potatoes with bacon and ham! I took her recipe and spinned it a bit and used my Instant Pot as a helper. The result was really yummy! I started with one portion but quickly went back for seconds. I think you’ll agree that this casserole is a winner!

Ingredients/Substitution Ideas

  • Red potatoes–or peeled russets
  • Bacon
  • Bacon grease
  • Onion
  • Black pepper
  • Garlic salt
  • Flour
  • Milk
  • Ham cubes
  • Parmesan cheese

Steps

Pour 1 ½ cups of water into bottom of Instant Pot. Add sliced potatoes into a steamer basket. Drop the basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting. Remove the lid. Set aside the steamer basket, discard the water.

Turn Instant Pot to saute setting. When display says HOT add in the bacon and cook until crispy. Use a slotted spoon to move the bacon to a paper towel lined plate. Reserve 3 Tbsp of the bacon grease in the pot. Add in the onions. Saute for 4 minutes. Stir in the pepper and garlic salt. 

Sprinkle in the flour and then whisk in the milk until smooth. Heat through until bubbly and thickened. Turn off Instant Pot.

Heat oven to 350° F. Stir the ham into Instant Pot.

Fold in the potatoes.

Scrape the mixture into a 9×9 inch square baking dish. Sprinkle with bacon and parmesan cheese. Cover with foil and bake for 20 minutes. Remove the foil, turn heat to 400° F and bake for 10 more minutes.

Serve and enjoy!

Notes/Tips

  • Serve as main dish or side dish. Add a side of green beans.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. I used my silicone steamer basket*.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

  • I like to cook my bacon in the air fryer.

Description

Scalloped potatoes with ham, bacon and parmesan made with the help of your Instant Pot. 


Ingredients

Scale
  • 1 1/2 pounds red potatoes, thinly sliced rounds
  • 4 slices of bacon, chopped
  • 3 Tbsp bacon grease
  • 1/2 cup finely diced onions
  • 1 tsp black pepper
  • 1 tsp garlic salt
  • 2 Tbsp flour
  • 1/4 cup milk
  • 8 ounces ham cubes
  • 1/4 cup shredded parmesan cheese

Instructions

    Can you sub the red potatoes with pasta?

      Yes. For step 1 you can add 2 cups of water to the pot and add in 8 ounces of short cut pasta. Pressure cook for 4 minutes. Then continue on with the recipe in step 2.
