Description

A fast and easy Instant Pot dinner of potatoes, ham, peppers and cheese.


Ingredients

Scale
  • 2 Tbsp butter
  • 1/2 cup diced onion
  • 1/2 of a red bell pepper, diced
  • 1/2 cup chicken broth
  • 18 ounces Russet potatoes, peeled and sliced into 1/4 inch rounds
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • Dash of smoked paprika
  • 8 ounces ham cubes
  • 3/4 cup shredded colby monterey jack cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onions and peppers and saute for 3 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add the potatoes evenly into the pot (try not to stack potatoes directly on top of each other). Sprinkle the potatoes with salt, pepper, rosemary, thyme, garlic powder and smoke paprika. Add the ham on top of the potatoes. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid. 
  5. Gently stir in the cheese. Serve and enjoy!
