Detention Casserole

Yum Yum! Whether you got detention at school or had a rough day at work you will love coming home to this comfort food. This casserole will be a gold star student at your dinner table tonight! It’s got fluffy rice with ham, sweet corn, spinach, cheddar, dijon mustard cream cheese and more. This is a popular dinner at my house and I love all the fun colors. It makes good lunch leftovers the next day too!

Ingredients/Substitution Ideas

  • Butter–or oil
  • Onion–yellow or white
  • Ham cubes–or smoked sausage
  • Chicken broth–or water and Better than Bouillon
  • Converted rice–or long grain white rice, jasmine, basmati
  • Dijon mustard–or yellow mustard
  • Garlic powder
  • Black pepper
  • Smoked paprika
  • Cream cheese
  • Frozen sweet corn–or canned corn
  • Spinach–fresh or frozen
  • Sharp shredded cheddar cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onions and saute for 2 minutes. Add in the ham and saute for 2 more minutes. Turn off the Instant Pot.

Pour in the broth and scrape bottom of pot so that nothing is sticking.

Sprinkle in the rice. Then add in the Dijon, garlic powder, pepper, paprika and cream cheese.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the corn, spinach and cheese.

Serve and enjoy!

Notes/Tips

  • Serve with some fresh fruit or raw veggies and dip.
  • This recipe is gluten-free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with spinach are Adele’s Casserole and Lazy Lasagna.
  • What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.

Keeper. Very tasty, but doesn’t need any more salt than what the ham provides. I’ve never used converted rice, I’m sure it’s lovely. If the long grain rice is too sticky for you tastes, use lower pressure settings, or the “Rice” cooking option on the cooker panel

I am sure that Jasmine Rice would not cook correctly with these instructions. all of your recipes use converted rice, which I don’t like. Have you tried to find instructions for regular, long grain rice?

you can use long grain white rice instead of converted. The rice will be more sticky.

With the same cooking time? Typically rice would take longer.
