Instant Pot or Crockpot Campfire Chicken has chicken, red potatoes, corn and lots of flavor from seasonings. An easy dump and go recipe!

Campfire Chicken

Campfire Chicken

Instead of foil packets over a fire try making this chicken, potato and vegetable dinner easily at home in your Instant Pot or Crockpot. The seasonings are perfect and it’s a dump and go dinner so it comes together quickly. My whole family loved this dinner and the Instant Pot was scraped clean.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon
  • Chicken tenderloins–frozen or fresh. I like to buy the big bag of frozen tenderloins from Costco (not Sams)
  • Red potatoes–or yukon gold potatoes
  • Carrots–optional
  • Olive oil–or canola oil
  • Butter
  • Smoked paprika–or 1 tsp of regular paprika
  • Dried oregano
  • Dried rosemary leaves
  • Dried thyme
  • Onion powder
  • Garlic powder
  • Salt
  • Black pepper
  • Frozen sweet white corn–or fresh corn off the cob

Steps

Add all ingredients in the order listed above into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Gently stir. Serve and enjoy!

Notes/Tips

  • This was an all in one pot meal for us but if you’d like you can serve it alongside cornbread and honey butter and a side salad.
  • You can also use chunks of boneless chicken thighs or breasts in the place of the tenderloins. I find that tenderloins stay moist and tender and work nicely.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days. I don’t suggest freezing this one. The potatoes get too mushy.

Description

Ingredients

Scale
  • 1/2 cup chicken broth
  • 1 1/4 to 1 1/2 pounds chicken tenderloins (frozen or fresh)
  • 4 medium red potatoes, cut into half inch cubes
  • 2 carrots, peeled and cut into half inch rounds (optional)
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried rosemary leaves
  • 1/2 tsp dried thyme
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 1/2 cups frozen sweet white corn

Instructions

  1. Add all ingredients in the order listed above into the Instant Pot.

Slow Cooker Instructions:

  1. Add all ingredients into the slow cooker and stir. 
  2. Cover and cook on LOW for 6 hours or on HIGH for 3 hours.
  3. Gently stir. Serve and enjoy!

    I gave this recipe a chance after seeing a review that the chicken didn’t cook properly – but even after doubling the recipe, everything came out perfect! I used my IP-DUO and increased the cook time to 5 mins with a 5 min natural release before manually releasing the pressure. Since it was named campfire chicken, I decided to add liquid smoke in with the broth. The key to success here was definitely layering everything exactly in order in the recipe and we had no issues with raw meat even though my IP was filled to the brim! I topped it with bacon bits, sour cream and cheese but my husband enjoyed it plain. Bookmarking this recipe for sure!

    I’m not going to rate the recipe… reading the reviews I won’t be trying it. but to be honest, I wouldn’t have tried it anyway since the Pinterest comments are turned off. find this comment helpful or not…. anytime I see a creator turn off comments on their OWN Pinterest Pin it’s an immediate no for me. This tells your audience that you only care about driving traffic and comments to your site. I’m already bringing traffic just coming here and looking at your recipe. I always review comments before making a dish and I leave reviews each time. I will look for someone who has pinned this, and THEN read the reviews… As a creator you may want to consider that in the future.

    You’ll get raw chicken and rock hard potatoes if you follow the instructions as written (2 min cook, 5 min elapsed release). I don’t normally have an issue using cook time/elapsed time listed in a recipe. I was skeptical about the instructions so I cut the potatoes and carrots smaller than instructed and cubed the chicken (fully thawed). And I cooked it for 3 minutes with a 5 minute elapsed release.

    I couldn’t tell that everything was raw until I’d stirred the dish because the chicken was on the bottom. I cooked it for another 5 minutes with a 5 minutes elapsed release but got a burn warning twice. Guessing that that was due to the seasonings dropping to the bottom of the pot when I stirred. The burned flavour permeated the dish so badly that we couldn’t tell if we would have liked the seasoning combo or not.

    My husband asked me not to make this again. That’s pretty rare for him but at today’s grocery prices I’d rather not chance ruining another $15 in chicken. I do love 1 pot dishes though, and ones that don’t include cheese or cream are a rarity. I hope someone else figures out the cook times for this recipe. I may try it again.

      I’m sorry that this didn’t work for you. I tested it in my Instant Pot and it was cooked perfectly so I’m not sure why yours were undercooked. I use an Instant Pot Duo and Instant Pot Nova. Did you use a Lux?

      I wish I could keep the person’s comments and delete the star rating. Unfortunately from my end I can’t do that. I can only delete the comment altogether. If they are helpful questions or comments I do keep them and if not I delete them. But I know what you are saying.

      In the recipe card at the bottom of the page there are IP instructions and then slow cooker so I would follow those. Yes you can use regular paprika!
