Description

Instant Pot or Crockpot Campfire Chicken has chicken, red potatoes, corn and lots of flavor from seasonings. An easy dump and go recipe!


Ingredients

Scale
  • 1/2 cup chicken broth
  • 1 1/4 to 1 1/2 pounds chicken tenderloins (frozen or fresh)
  • 4 medium red potatoes, cut into half inch cubes
  • 2 carrots, peeled and cut into half inch rounds (optional)
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried rosemary leaves
  • 1/2 tsp dried thyme
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 1/2 cups frozen sweet white corn

Instructions

Instant Pot Instructions:

  1. Add all ingredients in the order listed above into the Instant Pot.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  3. Gently stir. Serve and enjoy!

Slow Cooker Instructions:

  1. Add all ingredients into the slow cooker and stir. 
  2. Cover and cook on LOW for 6 hours or on HIGH for 3 hours.
  3. Gently stir. Serve and enjoy!
