Instant Pot Cabbage, Potatoes and Sausage
I love one pot meals for a busy weeknight. This Instant Pot sausage, cabbage and potatoes is a winning dinner with so much flavor.
One thing I’ve really come to love since I started cooking in an Instant Pot is cabbage. Cabbage gets perfectly tender in the Instant Pot in a short amount of time. It almost tastes like noodles or rice to me giving me the feeling of eating carbs. Which I like.
Ingredients/Substitution Ideas
- Bacon
- Smoked sausage–kielbasa, andouille, beef smoked sausage, chicken sausage or turkey sausage all work. I sliced mine in half lengthwise and then into quarter inch slices.
- Minced garlic–fresh or jarred
- Chicken broth–or beef broth or water and Better than Bouillon
- Worcestershire sauce
- Cabbage–I used green cabbage. It seems like a lot at first but it shrinks down a ton!
- Baby carrots–you can also use regular carrots cut into chunks
- Red or yukon gold potatoes
- Seasoned salt–I used Lawry’s brand
- Crushed red pepper flakes
How to make cabbage potatoes and sausage?
Instructions:
- Fry the bacon: Turn Instant Pot to saute setting. When display says HOT add in the bacon and fry until crispy. Use a slotted spoon to move the bacon to a paper towel lined plate.
- Brown sausage in bacon grease: Add the sliced smoked sausage into the pot and brown in the bacon grease for a couple minutes. Then add in the garlic and saute for 30 seconds.
- Deglaze the pot: Pour in the broth and scrape the bottom of the pot so that nothing is sticking. Turn off Instant Pot.
- Add ingredients: Add in the Worcestershire sauce, cabbage, carrots, potatoes. Sprinkle in the seasoned salt and red pepper.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting. Remove the lid.
- Finish it off: Gently stir. Taste test and add extra salt and pepper to taste, if needed. Scoop onto plates and sprinkle each serving with some of the bacon.
Recipe Notes/Tips
- Serve with a slice of crusty bread and butter. Homemade French bread is my favorite!
- Try mixing up the seasonings and spices. Some ideas are cajun seasoning, caraway seeds, smoked paprika, ranch dressing mix etc.
- Try adding in some fresh green beans. Add them in at the same time you add in the carrots.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. Halve the recipe in the 3 quart pot.
- Helpful tools I used: saute paddle*, cutting boards*, knives*, slotted spoon*, kitchen shears*, garlic press*
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Frequently asked questions
- Can I use ground sausage instead of smoked sausage? Sure! I would brown the sausage using the saute setting and drain off the excess grease before pressure cooking.
- Can I use russet potatoes instead of red potatoes? Sure! I would peel the Russet potatoes before pressure cooking them. Use the same pressure cook time.
- Can I use packaged bacon crumbles instead of raw bacon? You can. The main difference will be that you won’t have the flavor from the bacon grease when you brown the sausage and saute the garlic.
- How do I cut the carbs down? You can use cauliflower florets in the place of the potatoes. You can also leave out the carrots and replace it with celery chunks instead.
- Is this recipe gluten free? You can make this recipe gluten free by making sure you use gluten free Worcestershire sauce and broth.
- Is this recipe dairy free? Yes! This is a great dinner for someone who is lactose intolerant.
- How much cabbage do I need? It’s hard to say exactly (that’s why I weigh mine out) but it’s about half a large head of cabbage.

I didn’t have any uncooked bacon, but I do keep a container of bacon grease in my fridge, so I browned the sausage in that and added crumbled bacon. I knew that my husband didn’t like sauerkraut, but after 30 years of marriage I had no idea that he doesn’t like cabbage! He eyed up my dish and asked what was in it. OMGoodness. Forget Octoberfest, we’ll have an “oink fest” at our house when this gets done. Gotta share something. My Dad used to fry up bacon to keep in ‘fridge to make BLT’s. He’d save the grease for me to use as seasoning & I’d freeze it until needed. When he passed away I had a few containers in the freezer. Well, a few months ago I used the last of it & thought “what to do now?” Found something called “Bacon Up” online & ordered some. WHOA! I keep it in the ‘fridge & it’s amazing. So, when I make this I’ll use bagged bacon crumbles, and will saute my onions in Bacon Up. Will be back with stars.
