Bridge Brunch Casserole
Today’s recipe got it’s name because it’s the kind of brunch dish that ladies used to bring to bridge club. It’s easy to prep ahead the night before and feeds a crowd. I loved this casserole because it was basically zero stress. I prepped it the night before in about 10 minutes. I went on a huge, all-day hike with my friend and knew I would have no energy to cook dinner when I got home. It was absolutely the best to come home, turn on the oven, pop it in and then go and take a shower and come back to a hot and hearty dinner. We love eating breakfast foods for dinner! You can totally make it your own with whatever meats, cheeses, or veggies you have on hand. This is one of those recipes that makes the next day so much easier, whether you’re hosting brunch, need a quick breakfast, or just want dinner ready to go. (Recipe adapted from Melanie Makes).
Ingredients/Substitution Ideas
- French bread–stale french bread or baguette work great
- Ham–or cooked sausage crumbles
- Cheddar–I use sharp
- Eggs
- Milk
- Dry mustard
- Cream of chicken and herbs soup–or cream of mushroom soup
- Diced green chiles–I used mild
Steps
Spray a 9×13 inch pan with non-stick cooking spray. Cut bread into ½ inch cubes and spread them evenly into the pan. Add ham into pan evenly over the bread.

Sprinkle 1 ½ cups of cheese over the top.
In a bowl whisk together the eggs, 2 ½ cups of milk and dry mustard. Pour the mixture over the top of cheese.

In the same bowl whisk together the soup, ½ cup milk and diced green chiles. Spread the soup mixture evenly over the casserole.


Sprinkle remaining ½ cup of cheese over the top.

Cover the pan with foil and refrigerate for 8-24 hours.

Heat oven to 300° F. Bake covered for 45 minutes. Remove the foil and bake for 45 more minutes.
Let sit for 10 minutes, slice and serve.


Notes/Tips
- Serve as breakfast, brunch or as dinner. Serve alongside fruit or orange juice.
- You can swap in cooked bacon or sausage instead of ham.
- Use any cheese combo you love…pepper jack for a little kick, Swiss for something more mellow.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
