Key to the Kingdom Casserole

This recipe is a delicious, savory breakfast or brunch dish that’s got a solid balance of protein and flavor. It’s really easy to make and it’s made all in one pan. If you’re looking for something hearty to kick off the day (we actually like to eat it for dinner), this one’s great. The bacon and sausage add a rich, savory base, while the cottage cheese makes it creamy and a bit lighter than if you used just regular cheese.

It’s packed with protein (thanks to the eggs, sausage, and cottage cheese), and the spinach adds some greens. The seasonings of garlic, onion powder, Italian herbs, and a little red pepper kick, really ties it all together.

For substitutions, you could swap out the bacon for turkey bacon if you want to cut down on fat or use a different kind of sausage, like chicken sausage. If you don’t have cottage cheese, ricotta could work for a similar creamy texture. Add some bell peppers or mushrooms for extra veggies, or if you’re not feeling spinach, you could skip it altogether.

Overall, it’s a pretty versatile, easy-to-make dish that can be enjoyed at any time of day. Plus, the tomatoes on top are a nice, fresh touch that balance everything out!

I grabbed the idea for this recipe off a website called Get MacroED. The author stays, “For all my fellow cottage cheese haters do NOT discount this because of the cottage cheese…PLEASE. You won’t ever know it’s in there, but you’ll get all the macro benefits of eating it. It’s a total win-win. The first time I had this, I was visiting a friend who had cooked breakfast for me (check AND check). I had no idea it had my arch enemy cottage cheese in it and you won’t either.” I actually love cottage cheese but I agree with this statement that you won’t even know it’s in there.

Ingredients/Substitution Ideas

  • Bacon–I used thick cut
  • Breakfast sausage–I used Jimmy Dean
  • Cottage cheese–I used 2%
  • Eggs
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Red pepper flakes
  • Spinach–fresh or frozen
  • Cheddar cheese–I like sharp
  • Tomatoes

Steps

Heat oven to 375° F. 

Heat an oven safe pan (I used a cast iron skillet) over medium high heat. Add in the bacon and cook until almost crispy then add in the sausage and brown. Drain off excess grease. Turn off heat.

In a bowl whisk together the cottage cheese, eggs, salt, pepper, garlic powder, onion powder, Italian seasoning, red pepper flakes, spinach and cheese.

Pour the egg mixture into the pan and stir. 

Place in the oven and bake for 20-25 minutes. 

Top with tomatoes, slice and serve.

Notes/Tips

  • Serve with orange slices and whole wheat toast.
  • This recipe is high protein, gluten-free and low carb.
  • I used my 12″ Cast Iron Skillet*.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

  • 1/4 tsp italian seasoning
  • Pinch of red pepper flakes

  • 1/2 cup shredded cheddar cheese
  • Diced or sliced tomatoes, for topping

Instructions
