Guesthouse Casserole

We have guests over this week and I made this easy breakfast casserole. We all agreed that this casserole is a winner! It was so yummy and quite simple to put together. It’s got all the good parts of breakfast–biscuits and sausage gravy with eggs and a bit of cheese on top. This recipe is made on your stovetop and in the oven and although that’s not how I typically cook this recipe seems like it will definitely turn out the best using that method. I hope you get to try it soon! Enjoy!

Ingredients/Substitution Ideas

  • Ground breakfast sausage–I used Jimmy Dean
  • Flour
  • Milk
  • Kosher salt
  • Black pepper
  • Refrigerated biscuit dough–I used Pillsbury
  • Eggs
  • Cheddar cheese–I like sharp cheddar

Steps

Preheat oven to 350 degrees.

Heat a pan over medium high heat. Add in the sausage and break it up. Brown for about 5 minutes.

Sprinkle in the flour and cook for one minute.

Then slowly add in the milk, stirring constantly. Stir until gravy has thickened. Stir in ½ tsp salt and ¼ tsp pepper. Turn off the heat.

Spray a 9×13 inch with non-stick cooking spray. Cut each biscuit into 4 pieces. Scatter the dough pieces into the pan. Pour the sausage gravy into the pan.

In a bowl whisk together the eggs and ¼ tsp kosher salt and ¼ tsp black pepper. Pour the eggs over the top of the gravy. Bake for 35 minutes.

Sprinkle the cheese evenly over the top.

Slice and serve.

Notes/Tips

  • Serve with strawberries or other fruit like orange slices.
  • Try adding in some sauteed onions, garlics, mushrooms and peppers.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with eggs are egg bites and Instant Pot breakfast enchiladas.
