Alabama Bacon Casserole

I’ve seen recipes like this before and always dismissed them. The use of croutons just seemed too strange. But I decided to give it a shot. I was so happy and surprised at the results. The layer of croutons act like a stale bread. Plus they have lots of seasoning in them so there is no need for salt, pepper, garlic powder, onion powder etc. in the recipe. If you have bacon already cooked the prep time on this recipe will be like 5 minutes. Easy peasy! We ate this as breakfast for dinner! (This recipe is adapted from Bacon and Egg Casserole on the Alabama Farmers website.)

Ingredients/Substitution Ideas

  • Thick cut bacon
  • Seasoned croutons
  • Butter
  • Cheddar cheese
  • Eggs
  • Milk
  • Yellow mustard

Steps

Heat oven to 325° F.

Fry up the bacon and move to a paper towel lined plate. (I cooked my bacon in the air fryer). Crumble the bacon. Set aside.

Spray a 8×8 inch baking dish with non-stick cooking spray. Add in the croutons. Drizzle the butter over the croutons.  Sprinkle the cheese on top.

In a bowl whisk together the eggs, milk and mustard. Pour over the top of the cheese. Sprinkle bacon over the top.

Bake for 35-40 minutes. 

Slice and serve.

Notes/Tips

  • Serve with fresh fruit and/or a green smoothie.
  • Air frying bacon is quicker and less messy than pan-frying…if you have an air fryer try it you’ll never go back!
  • Diced bell peppers, green onions, or spinach can be stirred in for color and nutrients.
  • For a more custardy texture, let the egg mixture soak into the croutons for 10–15 minutes before baking.
  • The casserole is done when the center is puffed and doesn’t jiggle when shaken.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
