Backcountry Casserole–a hearty and flavorful Instant Pot or slow cooker dish featuring smoked sausage, red potatoes, and sweet corn in a Cajun-spiced tomato sauce.

Today’s recipe is an easy one and I loved the flavor. With only a handful of ingredients it comes together quickly. It’s a good one pot meal for those busy days. You can easily double the recipe if you’re feeding a crowd. Try adding in a handful of green beans or some spinach if you’d like to add in some greens.

Ingredients/Substitution Ideas

  • Olive oil–or bacon grease
  • Beef smoked sausage–or kielbasa
  • Chicken broth–or beef broth
  • Red potatoes–or peeled russet potatoes
  • Tomato sauce
  • Worcestershire sauce
  • Frozen sweet corn–or canned corn
  • Cajun seasoning–I used smidge and spoon brand from Smith’s

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the sausage and brown on both sides.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the potatoes, tomato sauce, Worcestershire, corn and cajun seasoning. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir and serve.

Notes/Tips

  • Serve with a green salad or some roasted vegetables.
  • This recipe can be gluten free if you use gluten-free Worcestershire sauce.
  • This recipe is dairy free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients

  • 1 Tbsp olive oil
  • 1 (12 oz) beef smoked sausage, sliced
  • 1/2 cup chicken broth
  • 1 pound red potatoes, cut into 1/2 inch cubes
  • 1 (8 oz) can tomato sauce
  • 1 Tbsp Worcestershire sauce
  • 1 cup frozen sweet corn
  • 1 tsp cajun seasoning

Instructions

  1. Add all ingredients into slow cooker and stir.
  2. Cover and cook on low for 2-3 hours, or until potatoes are tender.
  3. Stir and serve.

    This made a very good, quick, tasty and nutritious meal. I added a diced poblano pepper for more veggies. Potatoes came out just right, too. All fit easily in my 3 qt. IP Mini. Thanks again, Karen.

      Oh nice! I love using my 3 quart pot when I can because it’s easier to wash or fit in the dishwasher.
