Busy Wife Delight
This dinner was a delight! I loved it because it was seriously so fast and easy to make. I prepped it for maybe 5-10 minutes and then it was cooking in the pot. Secondly, it was so good! I loved it and ate two helpings. The rice was flavored perfectly, the chicken was tender and the corn added a pop of sweetness. I think you’ll love this when you’re just too busy to spend a lot of time on dinner but still want to feed your family. Try it this week! I am so glad I bought at extra box of the rice so I can make it again this week 🙂
Ingredients/Substitution Ideas
- Water
- Boneless skinless chicken thighs
- Zatarain’s cilantro lime rice
- Frozen sweet corn–or canned corn
- Shredded cheddar cheese–I like sharp cheese
- Sour cream
- Cilantro
Steps
Pour water into bottom of Instant Pot.
Add in the chicken, sprinkle in the rice and dump corn on top.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minute. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
Stir in the cheese and sour cream.
Serve topped with a bit of cilantro.
Notes/Tips
- Serve with a green salad and a cornbread muffin.
- If you’d like you can eliminate the sour cream and the cheddar. It will still taste amazing.
- Double the recipe for a crowd or yummy leftovers (keep the cooking time the same).
- You can also use chicken breasts or chicken tenderloins. Cut the breasts into cubes.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 cup frozen sweet corn
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup diced cilantro

I made this tonight 4 /12/24… It turned out so good! I did not add the sour cream or cheese and it was perfect! I used chicken broth instead of plain water and I had some frozen shredded rotisserie chicken on hand, so I threw that in there along with some chopped onion.
My hubby is not a fan of corn (which I’ve mentioned before) But I added it anyway because I like corn in my meals! LOL
He liked it, but said he could live without the corn! hahaha, My 20 yr. old said it was amazing… So we will be doing this dish again! Thanks, Karen for another yummy Recipe! 🙂
