Snow Day Soup–Instant Pot or slow cooker potato soup with sweet corn, chicken and bacon. A hearty soup for those cold winter nights.

Snow Day Soup
When the weather outside is frightful then there’s only one thing to do…make soup. This chicken and potato soup is a great option. It is hearty and comforting and you can choose to make it in your Instant Pot or slow cooker. With bacon, corn, chicken and potatoes I don’t think you can go wrong!

Ingredients/Substitution Ideas
- Bacon–I cook the bacon in the air fryer
- Bacon grease–reserve this from when you cook the bacon
- Onion–yellow or white
- Chicken broth–or vegetable broth, or Better than Bouillon
- Russet potatoes–or red potatoes
- Kosher salt
- Black pepper
- Garlic powder
- Red pepper flakes
- Frozen sweet corn
- Rotisserie chicken–or make your own
- Milk–I used 1% but 2% or whole would be good
- Cornstarch
Steps
Turn Instant Pot to saute setting. When display says HOT add in 1 Tbsp of bacon grease and the onion. Saute for 3 minutes.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add in the potatoes, salt, pepper, garlic powder, red pepper, corn and chicken.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting.

Pour a cup of the hot soup into the milk to temper it and then pour the mixture into the Instant Pot.

In a small bowl stir together 3 Tbsp cornstarch with ¼ cup of cold water until smooth. Turn Instant Pot to saute setting and stir the slurry into the pot. Let soup heat through and thicken on the saute setting for about 5-10 minutes, stirring every minute or so.

Ladle into bowls and top with bacon crumbles.


Notes/Tips
- Serve with crusty bread, cornbread or garlic bread and a side salad or caesar salad.
- This recipe is gluten free.
- Add shredded cheese for extra indulgence.
- Cooking the bacon in the air fryer* keeps things tidy and crisp.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- If you don’t have a soup button on your instant pot you can use low pressure instead.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 4 slices of bacon, cooked and crumbled (I do this step in the air fryer)
- 1 Tbsp bacon grease
- 1/2 cup diced onion
- 3 cups chicken broth
- 20 ounces peeled and cubed Russet potatoes
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- Pinch of red pepper flakes
- 1 cup frozen sweet corn
- 2 cups chopped, cooked rotisserie chicken
- 3 cups milk
- 3 Tbsp cornstarch
Instructions
Instant Pot Instructions:

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in 1 Tbsp of bacon grease and the onion. Saute for 3 minutes. Transfer to the slow cooker.
- Add in the broth, potatoes, salt, pepper, garlic powder, red pepper, corn and chicken.
- Cover and cook on low for 3-4 hours, or until potatoes are fork tender.
- Pour a cup of the hot soup into the milk to temper it and then pour the mixture into the slow cooker.
- In a small bowl stir together 3 Tbsp cornstarch with ¼ cup of cold water until smooth. Stir the mixture into the slow cooker. Cook on high without the lid for about 15-20 minutes, or until soup has thickened.
- Ladle into bowls and top with bacon crumbles.
