Description

A hearty and flavorful Instant Pot or slow cooker dish featuring smoked sausage, red potatoes, and sweet corn in a Cajun-spiced tomato sauce.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 (12 oz) beef smoked sausage, sliced
  • 1/2 cup chicken broth
  • 1 pound red potatoes, cut into 1/2 inch cubes
  • 1 (8 oz) can tomato sauce
  • 1 Tbsp Worcestershire sauce
  • 1 cup frozen sweet corn
  • 1 tsp cajun seasoning

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the sausage and brown on both sides. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the potatoes, tomato sauce, Worcestershire, corn and cajun seasoning. Don’t stir. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  5. Stir and serve. 

Slow Cooker Instructions:

  1. Add all ingredients into slow cooker and stir.
  2. Cover and cook on low for 2-3 hours, or until potatoes are tender.
  3. Stir and serve.
