Description
A hearty and flavorful Instant Pot or slow cooker dish featuring smoked sausage, red potatoes, and sweet corn in a Cajun-spiced tomato sauce.

- 1 Tbsp olive oil
- 1 (12 oz) beef smoked sausage, sliced
- 1/2 cup chicken broth
- 1 pound red potatoes, cut into 1/2 inch cubes
- 1 (8 oz) can tomato sauce
- 1 Tbsp Worcestershire sauce
- 1 cup frozen sweet corn
- 1 tsp cajun seasoning
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the sausage and brown on both sides.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the potatoes, tomato sauce, Worcestershire, corn and cajun seasoning. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir and serve.
Slow Cooker Instructions:
- Add all ingredients into slow cooker and stir.
- Cover and cook on low for 2-3 hours, or until potatoes are tender.
- Stir and serve.
