Instant Pot At the Lake Casserole
As we head into July it’s heating up and we will be spending some time at the lake! Whenever we get done with a lake day we always are tired and ready for food. This recipe fits the bill because it is a dump and press start recipe, it only has a 1 minute pressure cook time and it tastes so good! You’re going to love this creamy chicken, orzo and broccoli casserole.
Why this recipes works: the orzo (rice shaped pasta) and the frozen broccoli both need only a 1 minute pressure cooking time. Because the chicken is already cooked it is merely warmed through with the short pressure cooking time.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon
- Cooked, chopped chicken–such as rotisserie chicken
- Orzo
- Frozen broccoli
- Cream of chicken soup–or 4 ounces of cream cheese
- Worcestershire sauce
- Poultry seasoning
Steps
Pour broth into Instant Pot. Add in the chicken in an even layer.
Sprinkle the orzo on top of the chicken.
Evenly dump the broccoli over the top of the orzo.
Dump in the cream of chicken, Worcestershire and poultry seasoning. Don’t stir.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
Stir well. Serve and enjoy!
Notes/Tips
- We ate this as a one pot meal. However, if you’d like to eat some side dishes with the orzo this pairs well with cornbread and a fruit salad.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients
- 1 1/2 cups chicken broth
- 2–3 cups (about 12 ounces) cooked, chopped chicken (such as rotisserie chicken)
- 1 cup uncooked orzo (about 5.6 ounces)
- 1 (12 oz) bag frozen broccoli
- 1 (10.5 oz) can cream of chicken soup
- 2 tsp Worcestershire sauce
- 1 tsp poultry seasoning

This was great my husband liked it. He wants me to double the recipe. Could this be made with some other type of pasta and how much broth would I use and the cook time?

I will likely make this again but with some changes. I would cook the broccoli separately in the microwave as it was too overcooked in the IP for us. additionally I would reduce the poultry seasoning to 1/2 tsp, for us the seasoning was overpowering. and I would add some black pepper, probably only a 1/4 tsp or so.

I love all the ingredients and was excited to try. It turned out more like a broccoli mush. The orzo almost completely disappeared all together. I followed the directions exactly. I do not recommend this one at all.

How would I adjust the time if I were using whole wheat orzo?

I would still use the 1 minute pressure cook time and then a 10 minute natural pressure release.

Can I use fresh chicken, don’t have rotisserie. Would the times change?

What I would do is cook the fresh chicken first and then do the recipe as stated. Since orzo only needs a 1 minute pressure cook time the chicken won’t cook at the same rate.
