Right On Dinner is an easy one pot meal. It’s like a cheeseburger in a bowl! A fast and easy weeknight meal.

Right On Dinner
When you serve this dinner up you might just hear the phrase “right on!” I know I did at my house. This dinner is super satisfying but not overly heavy. You’ll love how this one pot meal is gluten free and fairly low carb too. You’ll also love the sauce that the meat is coated in! It has tons of flavor. You won’t even miss the bun!
Ingredients/Substitution Ideas
- Lean ground beef–I used 93/7. You can also use ground turkey. If your beef isn’t lean you will probably want to drain the excess grease.
- Shallot–or ½ cup diced yellow or white onion
- Kosher salt
- Black pepper
- Mayonnaise
- Yellow mustard
- Red wine vinegar–or white vinegar
- Smoked paprika
- Garlic powder–or granulated garlic
- Onion powder
- Ketchup
- Pickle juice
- Dill pickles
- Tomatoes
- Cheddar cheese–or colby jack
- Romaine lettuce–or iceberg lettuce
Steps
Turn Instant Pot to saute setting (“more”) or heat a pan on the stove over medium high heat. Add in the beef and break it up. Add in the shallot, salt and pepper. Brown the beef until cooked through. Turn heat off.

In a bowl whisk together the mayonnaise, mustard, vinegar, paprika, garlic powder, onion powder, ketchup and pickle juice.


Stir the sauce into the meat.

Stir in the pickles, tomatoes and cheese.

Spoon a scoop of the meat mixture into a bowl and top with a big handful of lettuce. Eat and enjoy!

Notes/Tips
- We had this as an all in one pot meal but you can add a slice of toast or a side of fries or tater tots.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- I love using my hamburger chopping tool* for ground meats.
- This recipe can easily be made on the stove as well. I like making it in my Instant pot and keeping it on the “keep warm” setting until everyone is ready to eat.
- This is a lower carb recipe than the normal cheeseburger. You can lower carbs even more by eliminating ketchup and tomatoes.
- This recipe is gluten-free.

I wasn’t sure what to expect from this recipe after reading it, especially since my British husband rarely, if ever, has a cheeseburger. But I decided to give it a try and was really surprised at how delicious it is – yep, even the Brit liked it!
In fact, I let my cleaner have the leftovers and she loved it; I gave her the recipe and your website info since she has a very busy life and often doesn’t have the time or the energy to do much in the way of cooking dinner. I hope she signs up because you have a lot of recipes that I know she’ll really like. She doesn’t have an Instant Pot but she likes using the slow cooker for obvious reasons.
