Summertime Sheet Pan Chicken Gyros–an easy and delicious way to make chicken gyros served with a creamy homemade tzatziki sauce and warm pita bread.

Summertime Sheet Pan Chicken Gyros
This is a favorite summer dinner at my house! The marinated chicken is super tender and flavorful. While it’s cooking you can quickly blend up the homemade tzatziki sauce and chop up your vegetables. It’s perfect for families because everyone can make their gyro just the way they like it. To make extras for lunches the next few days just double the chicken recipe and bake on 2 sheets pans. The chicken is also really great on salad.
Ingredients/Substitution Ideas
- Plain Greek yogurt–I like using 2% greek yogurt
- Olive oil
- Fresh lemon juice
- Garlic
- Shallot
- Smoked paprika
- Dried oregano
- Red chili flakes–or a pinch of cayenne pepper
- Kosher salt
- Black pepper
- Boneless skinless chicken thighs–or boneless skinless chicken breasts (cook for less time)
- Feta cheese
- Cucumber
- Pita bread–or naan bread or flatbread
- Shredded lettuce
- Diced fresh tomatoes
- Sliced red onion–optional
Steps
In a bowl stir together ingredients for the marinade and stir in the chicken to coat in the sauce. Refrigerate for at least 15 minutes and up to 24 hours. Heat oven to 425° F. Spoon the chicken onto a sheet pan. Bake for 15 minutes. Turn chicken over and bake for 5-10 more minutes.


In a blender add feta, 1/3 cup greek yogurt, garlic and lemon juice. Blend until smooth. Stir in the remaining 1/3 cup yogurt, cucumber and pinch of salt.


To serve: spread each pita with tzatziki, add a few pieces of chicken, top with lettuce, tomato and red onion, if desired.


Notes/Tips
- Marinate the chicken for at least 15 minutes, but a few hours or overnight gives the best flavor.
- The tzatziki tastes even better after it’s chilled for 30 minutes.
- If you’d like more color on the chicken, broil it for the last 2-3 minutes of cooking.
- Warm the pita bread for a few seconds in the microwave or on a skillet before serving so it’s soft and pliable.
- Store leftovers in an airtight container* in the refrigerator for 3-4 days. Store the tzatziki separately from the chicken and toppings for the freshest leftovers. The cooked chicken freezes well for up to 3 months. I don’t recommend freezing the tzatziki because the yogurt and cucumber can become watery after thawing.

- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 6 garlic cloves, minced
- 1 shallot, diced
- 1/8 tsp smoked paprika
- 1 tsp dried oregano
- Pinch of red chili flakes
- Pinch of kosher salt
- Pinch of black pepper
- 24 oz boneless skinless chicken thighs, cut into chunks (about 1 inch pieces)
Tzatziki sauce:
- 8 oz feta

- 1 medium cucumber, peeled and finely chopped or grated
- Pinch of kosher salt
