Street Corn Chicken Casserole–a creamy, zesty chicken casserole loaded with sweet corn, cotija cheese, lime and chili powder. This is inspired by classic Mexican street corn!

Street Corn Chicken Casserole

Last month my family went on a cruise and visited some Mexican ports. I would always see that delicious looking street corn on a stick and wanted to create something that took those flavors and put it into a meal I could feed my family. This street corn casserole has all those delicious flavors and adds chicken to make it more hearty and filling. I got lots of compliments on this dinner and think your family will love it too!

Ingredients/Substitution Ideas

  • Plain Greek yogurt–or sour cream. I like using full fat or 2% yogurt.
  • Mayonnaise
  • Chili powder
  • Garlic powder
  • Kosher salt
  • Sweet corn–frozen or fresh
  • Cooked shredded chicken–or cooked turkey. I like using rotisserie chicken from Costco.
  • Cotija cheese–or feta cheese
  • Cilantro–or green onions if you’re not a cilantro fan
  • Fresh lime juice

Steps

In a large bowl whisk together the Greek yogurt, mayo, 1 tsp of chili powder, garlic powder and salt. 

Fold in the corn, chicken and 2/3 cup cotija cheese. Coat well. 

Spread in a 9×13 inch baking dish. Sprinkle the remaining 1/3 cup of cotija cheese on top and ½ tsp of chili powder. 

Cover with foil and bake for 30 minutes. Remove foil and bake for 10 more minutes.

Squeeze fresh lime juice over the top and sprinkle the cilantro on top. 

Serve and enjoy.

Notes/Tips

  • Serve this with warm flour tortillas, tortilla chips, or over rice to stretch the meal a bit further. Add a side of black beans or a simple green salad to round things out.
  • You can add a little diced jalapeño or green chiles for heat.
  • I used half of a rotisserie chicken from Costco and saved the rest for a meal another day.
  • Adding ½ cup shredded Monterey Jack or mozzarella would make it a little meltier if you want that classic casserole feel.
  • A sprinkle of lime zest at the end would boost the flavor even more.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 1 cup plain Greek yogurt or sour cream
  • 1/3 cup mayonnaise
  • 1 1/2 tsp chili powder, divided
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 3 cups frozen sweet corn or fresh corn
  • 4 cups shredded or chopped rotisserie chicken
  • 1 cup (8 oz) crumbled cotija cheese, divided
  • 3 Tbsp chopped cilantro
  • 1 Tbsp fresh lime juice

Instructions

  1. Heat oven to 375° F. In a large bowl whisk together the Greek yogurt, mayo, 1 tsp of chili powder, garlic powder and salt. 
  2. Fold in the corn, chicken and 2/3 cup cotija cheese. Coat well.
