Description
An easy and delicious way to make chicken gyros served with a creamy homemade tzatziki sauce and warm pita bread.
Ingredients

For the marinade:
- 1/3 cup plain greek yogurt (I like to use 2% Fage)
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 6 garlic cloves, minced
- 1 shallot, diced
- 1/8 tsp smoked paprika
- 1 tsp dried oregano
- Pinch of red chili flakes
- Pinch of kosher salt
- Pinch of black pepper
- 24 oz boneless skinless chicken thighs, cut into chunks (about 1 inch pieces)
Tzatziki sauce:
- 8 oz feta
- 2/3 cup plain greek yogurt, divided
- 2 garlic cloves, minced
- Juice of one lemon
- 1 medium cucumber, peeled and finely chopped or grated
- Pinch of kosher salt
For serving:
- Pita bread
- Shredded lettuce
- Diced tomatoes
- Sliced red onion
Instructions
- In a bowl stir together ingredients for the marinade and stir in the chicken to coat in the sauce. Refrigerate for at least 15 minutes and up to 24 hours.
- Heat oven to 425° F. Spoon the chicken onto a sheet pan. Bake for 15 minutes. Turn chicken over and bake for 5-10 more minutes.
- In a blender add feta, 1/3 cup greek yogurt, garlic and lemon juice. Blend until smooth. Stir in the remaining 1/3 cup yogurt, cucumber and pinch of salt.
- To serve: spread each pita with tzatziki, add a few pieces of chicken, top with lettuce, tomato and red onion, if desired.
