Description

An easy and delicious way to make chicken gyros served with a creamy homemade tzatziki sauce and warm pita bread.


Ingredients

Scale

For the marinade:

  • 1/3 cup plain greek yogurt (I like to use 2% Fage)
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 6 garlic cloves, minced
  • 1 shallot, diced
  • 1/8 tsp smoked paprika
  • 1 tsp dried oregano
  • Pinch of red chili flakes
  • Pinch of kosher salt
  • Pinch of black pepper
  • 24 oz boneless skinless chicken thighs, cut into chunks (about 1 inch pieces)

Tzatziki sauce:

  • 8 oz feta
  • 2/3 cup plain greek yogurt, divided
  • 2 garlic cloves, minced
  • Juice of one lemon
  • 1 medium cucumber, peeled and finely chopped or grated
  • Pinch of kosher salt

For serving:

  • Pita bread
  • Shredded lettuce
  • Diced tomatoes
  • Sliced red onion

Instructions

  1. In a bowl stir together ingredients for the marinade and stir in the chicken to coat in the sauce. Refrigerate for at least 15 minutes and up to 24 hours. 
  2. Heat oven to 425° F. Spoon the chicken onto a sheet pan. Bake for 15 minutes. Turn chicken over and bake for 5-10 more minutes. 
  3. In a blender add feta, 1/3 cup greek yogurt, garlic and lemon juice. Blend until smooth. Stir in the remaining 1/3 cup yogurt, cucumber and pinch of salt. 
  4. To serve: spread each pita with tzatziki, add a few pieces of chicken, top with lettuce, tomato and red onion, if desired.
