Instant Pot Greek Nachos—pita chips, topped with seasoned chicken, feta and lots of tzatziki sauce. A fun and healthier twist on nachos. You can also make this in the slow cooker.

Instant Pot Greek Nachos

My sister says that one of her favorite summer meals is Greek nachos. I knew that I needed to add them to my summer menu too. I love Greek food! I love the lemon flavor, feta cheese, pita and of course the tzatziki sauce. The fun thing about Greek nachos is all the toppings that you can add (or not add). This is a great meal for a family that has picky kids because each person can choose what he/she wants to add to their plate.

What Kind Of Chicken Can I Use?

I used a combination of boneless, skinless chicken breasts and chicken thighs. It was the perfect combination of dark and white meat. You’ll notice that there isn’t a lot of extra liquid added to this recipe. The reason? Chicken puts off so much liquid that it comes to pressure without adding in extra broth. You may wish to add 1/2 cup of chicken broth to your pot if you use organic chicken that has less or no water injected into the chicken. Look at the packaging of your chicken.

Where do you find pita chips?

Pita chips are crunchy triangle baked pitas. I found them in the bakery section of my grocery store. Sometimes they are tricky to find and they aren’t kept next to the other chips. The brand that I used was Stacy’s Pita Chips. Other options are to bake your own pita chips in the oven. I like the Papa Pitas brand. I use a pizza cutter to cut the pitas into chip size pieces and then brush them with olive oil. Then I bake them in the oven for 7 minutes at 400 degrees. What Is Tzatziki Sauce?

The best sauce ever. Basically. It’s a yogurt cucumber sauce with garlic and dill. It’s super simple and it’s so light and refreshing. I like to dip pitas in it or serve it on top of gyros. I made my tzatziki sauce with homemade Greek yogurt. You can also use store-bought whole fat yogurt, like the Fage brand. I like the thickness and consistency of Greek yogurt best.

What does feta cheese taste like?

Feta is salty, tangy and sometimes a bit lemony. The texture can be creamy or crumbly and dry depending on the age of the cheese. You can find feta next to the other cheeses are your grocery store. My son and I both love feta but my daughter and husband do not.

Description

Ingredients

Units Scale

For the chicken:

  • 2 pounds boneless skinless chicken thighs or breasts (or a combination)
  • 3 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1 1/2 tsp sea salt
  • 1 tsp black pepper
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder

For the tzatziki sauce:

  • 1 1/2 cups plain Greek yogurt
  • 1 1/2 cups seeded, peeled and finely diced cucumbers
  • 1 1/2 Tbsp dried dill
  • 1/2 tsp black pepper
  • 1 1/2 tsp minced garlic
  • 3/4 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1 1/2 tsp olive oil

Topping ideas for the nachos:

  • Pita chips
  • Diced tomatoes
  • Diced cucumbers
  • Diced red peppers
  • Pepperoncinis
  • Feta cheese
  • Olives
  • Diced red onions

Instructions

  1. Pressure cook chicken: Add chicken, lemon juice, olive oil, vinegar, sea salt, pepper, oregano, garlic powder and onion powder to Instant Pot. Cover and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid. Move chicken to a cutting board and chop*. 
  2. Make the tzatziki sauce: Stir the yogurt, cucumber, dill, pepper, garlic, salt, garlic powder and olive oil together in a bowl. 
  3. Assemble the nachos: Lay some pita chips on a plate, add some of the chicken on top and then add desired toppings. End with a large dollop of tzatziki sauce. Eat and enjoy!

Notes

I used my 6 quart Instant Pot Duo 60 7 in 1*. Make this in the 8 quart by adding 1/2 cup of chicken broth in with the chicken. Make in the 3 quart pot with no changes.

There isn’t a lot of liquid in this recipe because chicken puts off so much liquid that it comes to pressure without adding in extra broth. Slow Cooker Instructions: Add all chicken ingredients into slow cooker. Cover and cook on low for 4-6 hours. Remove lid and place chicken on a cutting board. Chop the chicken and serve on top of nachos. 

For a low carb and gluten free version serve the chicken and toppings on a shredded lettuce instead of pita chips.

    This was very delicious. I used Siete brand almond tortillas, cut them up and toasted them. We have tried it with pita chips but found the pita chips to be too heavy. My husband absolutely loved it. I will definitely be making it again.

    This looks great and so easy, I’m going to try Greek soft taco’s or flat bread roll-ups instead of nachos. I’m always looking for easy portable food for when we camp and these would be great. I purchased an IP 3 qt Mini for our RV because I loved my 6 qt for our home kitchen so much. TY
