Greek Style Garlic Chicken can be made with your Instant Pot or Crockpot. The chicken is served alongside yogurt cucumber sauce, lettuce, tomato and toasted pitas. A great summer meal!

Greek Style Garlic Chicken (Instant Pot or Crockpot)
This is winning dinner that I know you’re going to love! Tender bites of chicken are served with a creamy yogurt-cucumber-dill sauce and pitas. Mmm mmm! My family loved this dinner and my son was eating the leftovers at 10:30 last night. It’s a perfect fresh summer dinner.
The chicken is seasoned a little before cooking but mostly after cooking. This gives the chicken lots of flavor! You can make this with rotisserie chicken for an ultra fast meal or you can cook bone-in or boneless chicken pieces in your Instant Pot or crockpot.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Boneless, skinless chicken thighs–or bone-in chicken breasts or rotisserie chicken
- Rotisserie chicken seasoning–I found mine at the grocery store but you can also make your own from scratch
- Lemon juice–fresh is best. I like to buy a bag of lemons and juice them all at the same time. I freeze it into tablespoon increments in an ice cube tray.
- Olive oil
- Garlic–fresh is best. I used my garlic press*
- Black pepper
- Kosher salt
- Paprika
- Full fat plain Greek yogurt–I make my own from scratch. You can also use low fat yogurt.
- Cucumber–I left the peels on but you can peel if you want. I used the little baby cucumbers from Costco.
- Dried dill–fresh dill would also be great
- Garlic powder
- Shredded lettuce–I used romaine but ice berg also works
- Diced tomatoes–or cherry or grape tomatoes, halved
- Pitas–I used the Papa Pita brand that I got from Costco. I brushed the pitas with olive oil, sprinkled with garlic salt and toasted them. You can also use pita chips.
Steps
- Add chicken: Pour 1 cup broth into Instant Pot. Add in the chicken. Sprinkle chicken with rotisserie chicken seasoning.
- Pressure cook the chicken: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes for fresh chicken or 15 minutes for frozen chicken. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Chop chicken: Transfer chicken to a chopping board and shred or chop (remove bones and skin if using bone-in chicken). Add chicken to a mixing bowl.
- Season chicken: Add lemon juice, olive oil, garlic, pepper and salt in with the chicken. Toss. Set chicken aside.
- Make yogurt sauce: Make the sauce by stirring the yogurt, cucumber, dill, salt, pepper and garlic powder together in a bowl.
- Assemble bowls: Add individual portions of chicken, sauce, pitas, tomatoes and lettuce to bowls or plates, eat and enjoy!
Notes/Tips
- If you want to make this with rotisserie chicken it makes it so fast and easy! No cooking necessary. Just start with step 4 by adding the cooked, chopped chicken to a bowl and seasoning it. Make the sauce and you’re ready to go!
- This can be served with hot or cold chicken.
- I randomly bought bone-in chicken breasts the other day and they worked GREAT in the Instant Pot. You get the white meat that is lower fat and calories but it stays moist and tender. Try it!
- When you serve the chicken with the pitas, tomatoes and lettuce this is pretty much a meal! You can serve alongside some quinoa or lemon rice, if you’d like.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store chicken leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- This recipe is gluten-free if you serve without the pitas. Try serving with lemon rice or quinoa instead of pita for a gluten free option.
- To make this low carb don’t serve with pitas and tomatoes. Just serve chicken and sauce over lettuce.

Ingredients
For the chicken:
- 1 cup chicken broth
- 2 pounds boneless, skinless chicken thighs or 2 pounds bone-in chicken breasts (or 4 cups chopped, rotisserie chicken)
- 2 tsp rotisserie chicken seasoning
- 3 Tbsp lemon juice
- 1 Tbsp olive oil
- 1 fresh garlic clove, minced
- 1/2 tsp black pepper
- 1/2 tsp kosher salt
- 1/2 tsp paprika
For the sauce:
- 1 cup full fat plain Greek yogurt
- 1 cup diced cucumber
- 1 Tbsp dried dill
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
Other:
- Shredded lettuce
- Diced tomatoes
- Pitas, sliced into wedges (I brushed mine with olive oil, sprinkled with garlic salt and toasted them)

- Transfer chicken to a chopping board and shred or chop (remove bones and skin if using bone-in chicken). Add chicken to a mixing bowl.
- Add lemon juice, olive oil, garlic, pepper and salt in with the chicken. Toss. Set chicken aside.
- Make the sauce by stirring the yogurt, cucumber, dill, salt, pepper and garlic powder together in a bowl.
- Add individual portions of chicken, sauce, pitas, tomatoes and lettuce to bowls or plates, eat and enjoy!

Oh Karen! Fantastic! This came along just as I was having a major Greek food craving. I fixed it with your lemon rice YUM and added sliced black olives, purple onion and Feta cheese to the tomatoes for the toppings. My Hubby is not a fan of cucumber hence Tzatziki (I LOVE it though) so I will try this for him: Greek Style Spicy Almond Sauce from greekboston.com. He chose it from several Greek sauce recipes they offered. I will pick up some pitas for tonight’s dinner and add the chopped romaine!
