Cabin French Toast Bake–an easy breakfast casserole made with French bread, eggs, brown sugar, butter, cinnamon and vanilla. This makes two 9x 13 inch pans so it’s perfect for feeding a crowd on holidays, family vacations and weekend brunches.

We’re spending the Fourth of July at our cabin with Reagan, Skyler, and a group of their friends, and this year I decided I didn’t want to spend the whole trip in the kitchen. I’m keeping the menu full of crowd-pleasing meals that are easy to transport, made with simple ingredients, and don’t leave me with a sink full of dishes. They’re all teen-approved and perfect for feeding a hungry group without a lot of stress. So far I’ve shared the french onion sloppy joes.

Cabin French Toast Bake

This was the perfect cabin breakfast because it only took about 15 minutes of prep and uses just 7 basic ingredients. One of my favorite things about this recipe is that you can buy the French bread several days ahead of time. In fact, slightly stale bread actually makes the casserole even better! That’s especially convenient if you’re making this toward the end of a vacation and trying to use up what you already have. You can prepare this the night before or make it the morning of! Both options work well. Joseph, one of the friends staying with us, took one bite and said, “This is the best breakfast I’ve ever had.” I told him I was definitely putting that quote in the blog post. 😉 The finished casserole is sweet, buttery, and almost like a warm bread pudding with a caramelized brown sugar topping. We served ours with sausage patties and sliced nectarines, and it was the perfect breakfast before a busy day. This recipe makes two 9×13-inch pans, which is ideal for feeding a crowd, but you can easily cut everything in half if you’re cooking for a smaller group.

Ingredients/Substitution Ideas

  • French bread
  • Butter
  • Brown sugar
  • Eggs
  • Milk–whole milk a richer casserole
  • Vanilla
  • Cinnamon

Steps

Heat oven to 425° F. Cut the French bread into cubes. Stale or toasted bread works well for this recipe. You can cut up the cubes the night before and let them sit on the counter overnight. 

Heat a saucepan over medium heat and let the butter melt. Whisk in the brown sugar until it is dissolved and smooth.

Pour half the brown sugar mixture into one 9×13 inch pan and the other half into another 9×13 inch pan. 

Divide the bread cubes between the two pans and spread evenly.

In a mixing bowl whisk the eggs, milk, vanilla and half of the cinnamon together. Pour the mixture evenly over both pans. 

Sprinkle the remaining 2 tsp of cinnamon over the tops of the pans and the 2 Tbsp of brown sugar over the pans as well. 

Bake for 30 minutes, until top is golden brown. 

Slice, serve and enjoy!

Notes/Tips

  • We served this with sausage patties and sliced nectarines.
  • Slightly stale or day-old bread works best because it absorbs the custard without becoming mushy. You can cube the bread the night before and leave it uncovered on the counter to dry out a bit.
  • If you prefer, assemble the casserole the night before, cover, refrigerate, and bake the next morning. You may need to add 5-10 minutes to the baking time if it’s cold from the refrigerator.
  • Add chopped pecans or walnuts before baking for extra crunch.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. Reheat individual portions in the microwave for 30-60 seconds.
  • This recipe makes two 9×13-inch pans, making it ideal for feeding a crowd or freezing one pan for later.

Notes

This makes 2 9×13 inch pans. You can easily halve this recipe. 

This dish is plenty sweet. There is no need for syrup on top.
