Low Carb Casserole–an easy, protein-packed egg casserole loaded with sausage, spinach, zucchini, and cheddar. It’s perfect for meal prep or feeding a crowd.

Low Carb Casserole
This recipe is naturally low carb without any extra effort. There’s no pasta, bread, or potatoes here…just eggs, savory sausage and veggies like spinach and zucchini. It’s a really satisfying meal (we had it for dinner) that didn’t leave me feeling sluggish or weighed down. It’s a great option if you’re trying to cut back on carbs or just balance out heavier meals throughout the day. This is a good one for meal prep too. It makes for an easy microwaveable breakfast all week. Enjoy!
Ingredients/Substitution Ideas
- Ground breakfast sausage–or ground turkey breakfast sausage. I used Jimmy Dean brand.
- Onion–or shallot
- Spinach–or kale
- Zucchini–or yellow squash
- Eggs
- Kosher salt
- Black pepper
- Garlic powder–or 2 tsp minced fresh garlic
- Greek yogurt–or sour cream
- Shredded cheddar cheese–or mozzarella or Monterey Jack
Steps
Heat oven to 350° F. Spray a 9×13 inch baking dish with non-stick cooking spray.
Heat a pan over medium high heat. Add in the sausage and break it up. Brown for 4 minutes. Stir in the onion and cook for 4 more minutes. Drain off excess grease.
Spread the sausage into the bottom of the 9×13 inch pan.

Add spinach and zucchini over the top of the sausage.


In a mixing bowl add the eggs, salt, pepper, garlic powder and Greek yogurt. Whisk until smooth. Pour the mixture over the top of the zucchini.

Sprinkle cheddar over the top.

Bake for 45 minutes.

Slice and serve.

Notes/Tips
- Serve with fresh fruit, toast or orange juice.
- If your zucchini is very watery, squeeze out excess moisture with a paper towel before adding it to the dish.
- I used my 9×13 inch baking dish that is metal. If you use a glass or ceramic baking dish you’ll need to increase the baking time by 5-10 minutes.
- You can swap in other veggies like mushrooms, bell peppers, or broccoli. Just sauté firmer vegetables first.
- Slice leftovers into portions and refrigerate for up to 4 days. Reheat in the microwave for 30–60 seconds or until warmed through.
