Mind-blowing Casserole
This recipe is adapted from Mind-blowing Hashbrown Breakfast Casserole Recipe on Half Scratched. It’s a super easy breakfast casserole that can be cooked in the slow cooker or the oven. It can easily be doubled if you’re serving a crowd at a brunch. Skyler loved this one with a little salsa on top. I’m always a ketchup fan, which I know some people think is weird. Ingredients/Substitution Ideas
- Cubed hashbrowns–or shredded hashbrowns
- Butter
- Eggs
- Evaporated milk–or half and half
- Seasoned salt
- Cubed ham–or cooked bacon or sausage
- Shredded pepper jack cheese–or cheddar cheese
- Shredded mozzarella cheese–or Monterey Jack
Steps
Spray slow cooker with non-stick cooking spray.
Spread the hashbrowns in the bottom of the crock. Drizzle the butter over the top.

In a bowl whisk together the eggs, milk and seasoned salt. Pour the mixture over the hashbrowns.

Scatter the ham and cheese on top.

Cover and cook on high for 2 hours, or until eggs are set.

Notes/Tips
- Serve with fresh fruit, orange juice or yogurt.
- Add veggies like diced onions, bell peppers or spinach for extra flavor and nutrition.
- I used my 3 quart casserole crock. You can also make this in an oval 6 quart slow cooker.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. To freeze: cut into portions, wrap tightly, and freeze for up to 2 months.
- You can assemble this the night before and refrigerate, then cook in the morning (great for holidays!).

- 16 oz cubed hashbrowns
- 2 Tbsp melted butter
- 3 eggs
- 1/2 cup evaporated milk
- 1 tsp seasoned salt
- 2 cups cubed ham
- 1/2 cup shredded pepper jack cheese
- 1 cup shredded mozzarella cheese
Instructions
Slow Cooker Instructions:

Oven Instructions:
- Heat oven to 350° F. Spray a 9×13 inch baking dish with non-stick cooking spray.
- Spread the hashbrowns in the bottom of the pan. Drizzle the butter over the top.
- In a bowl whisk together the eggs, milk and seasoned salt. Pour the mixture over the hashbrowns.
- Scatter the ham and cheese on top.
- Bake for 60 minutes until hashbrowns are hot and eggs are set.
