Mind-blowing Casserole

This recipe is adapted from Mind-blowing Hashbrown Breakfast Casserole Recipe on Half Scratched. It’s a super easy breakfast casserole that can be cooked in the slow cooker or the oven. It can easily be doubled if you’re serving a crowd at a brunch. Skyler loved this one with a little salsa on top. I’m always a ketchup fan, which I know some people think is weird. Any other eggs and ketchup fans out there? If you’re looking for an easy ham and egg dish try this one out soon.

Ingredients/Substitution Ideas

  • Cubed hashbrowns–or shredded hashbrowns
  • Butter
  • Eggs
  • Evaporated milk–or half and half
  • Seasoned salt
  • Cubed ham–or cooked bacon or sausage
  • Shredded pepper jack cheese–or cheddar cheese
  • Shredded mozzarella cheese–or Monterey Jack

Steps

Spray slow cooker with non-stick cooking spray.

Spread the hashbrowns in the bottom of the crock. Drizzle the butter over the top. 

In a bowl whisk together the eggs, milk and seasoned salt. Pour the mixture over the hashbrowns. 

Scatter the ham and cheese on top.

Cover and cook on high for 2 hours, or until eggs are set. 

Cheesy Ham Hashbrown Bake

Notes/Tips

  • Serve with fresh fruit, orange juice or yogurt.
  • Add veggies like diced onions, bell peppers or spinach for extra flavor and nutrition.
  • I used my 3 quart casserole crock. You can also make this in an oval 6 quart slow cooker.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. To freeze: cut into portions, wrap tightly, and freeze for up to 2 months.
  • You can assemble this the night before and refrigerate, then cook in the morning (great for holidays!).

Ingredients

  • 16 oz cubed hashbrowns
  • 2 Tbsp melted butter
  • 3 eggs
  • 1/2 cup evaporated milk
  • 1 tsp seasoned salt
  • 2 cups cubed ham
  • 1/2 cup shredded pepper jack cheese
  • 1 cup shredded mozzarella cheese

Instructions

Slow Cooker Instructions:

  1. Spray slow cooker with non-stick cooking spray.
  2. Spread the hashbrowns in the bottom of the crock. Drizzle the butter over the top.

  5. Cover and cook on high for 2 hours, or until eggs are set. 

Oven Instructions:

  1. Heat oven to 350° F. Spray a 9×13 inch baking dish with non-stick cooking spray.
  2. Spread the hashbrowns in the bottom of the pan. Drizzle the butter over the top. 
  3. In a bowl whisk together the eggs, milk and seasoned salt. Pour the mixture over the hashbrowns. 
  4. Scatter the ham and cheese on top.
  5. Bake for 60 minutes until hashbrowns are hot and eggs are set.
