American Casserole–a high protein breakfast casserole packed with sausage, cottage cheese, eggs, hash browns, and veggies, baked to golden perfection in one skillet.

American Casserole

This one pan dish is perfect for brunch or for dinner! It’s got all the things…veggies and protein and lots of flavor. We love topping this with a bit of salsa. You can get creative and add in more veggies and you can add in bacon crumbles or ham cubes in the place of sausage, if you prefer. This recipe was adapted from American Breakfast Casserole on All Recipes.

Ingredients/Substitution Ideas

  • Ground pork sausage–or turkey sausage
  • Onion
  • Green bell pepper–or red bell pepper
  • Cottage cheese
  • Eggs
  • Frozen hash browns
  • Everything bagel seasoning–or another seasoning of your choice
  • Tomatoes
  • Sharp cheddar cheese–or pepper jack, colby jack

Steps

Preheat oven to 350° F. Heat a cast iron skillet (or an oven safe skillet) over medium high heat. Add in the sausage and break it up. Add in the onions and peppers. Brown for 5 minutes. Turn off heat.

In a mixing bowl whisk together the cottage cheese and eggs. Stir in the hashbrowns, seasoning, tomatoes and cheese. Add the mixture into the sausage in the skillet and stir well.

Bake for 30-40 minutes. 

Slice, serve and enjoy! (We like this with a little salsa on top)

Notes/Tips

  • Serve with whole wheat toast and orange juice. We like to serve this as breakfast for dinner.
  • This recipe can easily be doubled. But you’ll need to increase the cooking time by 10 minutes or so.
  • The hashbrowns don’t need to be thawed. Just add them in frozen.
  • This recipe is gluten free. (Just make sure the hashbrowns and bagel seasoning are gluten free).
  • If I don’t have a cast iron skillet*, can I use a regular baking dish? Yes. Cook the sausage, onions, and peppers in a regular skillet on the stovetop. Transfer the cooked mixture to a greased 8×8 or 9×9 baking dish (or a similar-sized casserole dish). Mix the egg, cottage cheese, hash browns, seasoning, tomatoes, and cheese in a separate bowl, then stir it together with the sausage mixture in the baking dish. Bake at 350°F for the same 30-40 minutes, or until the center is set and the top is lightly golden.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 1/2 pound ground pork sausage
  • 1/2 cup diced onion
  • 1/2 green bell pepper, cored and diced
  • 3/4 cup cottage cheese
  • 3 eggs
  • 2 cups frozen hash browns
  • 1 tsp everything bagel seasoning
  • 1/2 cup diced fresh tomatoes
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  4. Slice, serve and enjoy! (We like this with a little salsa on top)
