Description

A high protein breakfast casserole packed with sausage, cottage cheese, eggs, hash browns, and veggies, baked to golden perfection in one skillet.


Ingredients

Scale
  • 1/2 pound ground pork sausage
  • 1/2 cup diced onion
  • 1/2 green bell pepper, cored and diced
  • 3/4 cup cottage cheese
  • 3 eggs
  • 2 cups frozen hash browns
  • 1 tsp everything bagel seasoning
  • 1/2 cup diced fresh tomatoes
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  1. Preheat oven to 350° F. Heat a cast iron skillet (or an oven safe skillet) over medium high heat. Add in the sausage and break it up. Add in the onions and peppers. Brown for 5 minutes. Turn off heat.
  2. In a mixing bowl whisk together the cottage cheese and eggs. Stir in the hashbrowns, seasoning, tomatoes and cheese. Add the mixture into the sausage in the skillet and stir well.
  3. Bake for 30-40 minutes. 
  4. Slice, serve and enjoy! (We like this with a little salsa on top)
