Description
A high protein breakfast casserole packed with sausage, cottage cheese, eggs, hash browns, and veggies, baked to golden perfection in one skillet.
Ingredients

- 1/2 pound ground pork sausage
- 1/2 cup diced onion
- 1/2 green bell pepper, cored and diced
- 3/4 cup cottage cheese
- 3 eggs
- 2 cups frozen hash browns
- 1 tsp everything bagel seasoning
- 1/2 cup diced fresh tomatoes
- 1/2 cup shredded sharp cheddar cheese
Instructions
- Preheat oven to 350° F. Heat a cast iron skillet (or an oven safe skillet) over medium high heat. Add in the sausage and break it up. Add in the onions and peppers. Brown for 5 minutes. Turn off heat.
- In a mixing bowl whisk together the cottage cheese and eggs. Stir in the hashbrowns, seasoning, tomatoes and cheese. Add the mixture into the sausage in the skillet and stir well.
- Bake for 30-40 minutes.
- Slice, serve and enjoy! (We like this with a little salsa on top)
