New Jersey Casserole
New Jersey bagels are considered some of the best in the country, often rivaling even the famous New York bagels. Known for their dense, chewy texture and flavorful crust, New Jersey bagels have become a staple of the state. This casserole takes the bagel as the base of the dish and adds in tomatoes, jalapenos, eggs, cheese and bacon. The best part of the this casserole? The cream cheese! YUM. Nothing is as good with a bagel as some cream cheese. Greg and I took this casserole down! It was super good. Try it for breakfast or, like we did, for dinner.
Ingredients/Substitution Ideas
- Day old everything bagel–or onion bagel
- Tame pickled jalapenos–look for the Mezzetta brand by the pickles
- Grape tomatoes–or cherry tomatoes
- Bacon–or bacon crumbles
- Eggs
- Whole milk–or half and half, evaporated milk
- Colby monterey jack blend cheese
- Ground mustard
- Garlic salt
- Black pepper
- Cream cheese–plain or you can try a flavored cream cheese like onion and chives
- Everything bagel seasoning–I buy in bulk bins at Winco
Steps
Spray a 1 ½ quart baking dish with non stick cooking spray.

Add the bagel pieces, jalapenos, tomatoes and bacon to the dish and toss.

In a small bowl whisk together the eggs, milk, cheese, mustard, garlic salt and pepper.

Pour egg mixture over the top of the bagel pieces. Press to submerge.
Cut the cream cheese into tiny pieces and drop evenly over the top of the casserole. Sprinkle a pinch of bagel seasoning over the top.

Bake for 40-50 minutes, or until center is set and edges of golden brown. Slice and serve.

Notes/Tips
- Serve with a side of crispy hashbrowns, some fresh fruit or a side of sausage.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1/4 cup diced tame pickled jalapenos
- 1/2 cup halved grape or cherry tomatoes
- 2 pieces of bacon, fried and crumbled
- 3 eggs
- 1/2 cup whole milk
- 1/2 cup shredded colby monterey jack blend cheese
- 1/8 tsp ground mustard
- 1/8 tsp garlic salt
- 1/8 tsp black pepper
- 1 ounce cream cheese
- Pinch of everything bagel seasoning

Sounds like the perfect “breakfast for dinner” recipe! I like to fry up a bunch of bacon at one time (in my air fryer, of course), then stash several pieces in the freezer for future use—like for this recipe!
YES! I love this idea. Air fryer bacon is the best. It’s the only way I cook it now.
