Snuggled Up Chicken
This slow cooker chicken dish is easy to make and has lots of flavor! You may want to double the recipe because the leftovers are even better the next day. This chicken has amazing flavor thanks to the lemon juice and zest. It is also protein packed because of the cottage cheese and the chicken. The chicken is snuggled in the unique sauce and this feels like comfort food although it it quite healthy with the use of cottage cheese, lemon and garlic.
Ingredients/Substitution Ideas
- Butter
- Shallot–or onion
- Garlic cloves
- Cottage cheese or ricotta cheese–I used full fat
- Flour–or cornstarch
- Lemon
- Boneless skinless chicken thighs–or chicken breasts. Frozen is okay.
- Red pepper flakes
- Garlic powder
- Kosher salt
- Black pepper
Steps
Heat a pan over medium high heat. Add in the butter and let it melt. Add in the shallot and saute for 3 minutes. Add in the garlic and saute for 30 seconds. Transfer to the slow cooker. My slow cooker has an oven setting so I saute directly in my slow cooker.

Stir in the cottage cheese, flour, lemon zest and juice.
Nestle the chicken thighs into the sauce. Sprinkle the red pepper, garlic powder, salt and pepper into the slow cooker.

Cover slow cooker and cook on low for 3-4 hours.

Serve the chicken with the sauce over the top.

Notes/Tips
- Serve with mashed potatoes, rice, noodles, cauliflower rice, bread or broccoli.
- This recipe can be gluten free if you use cornstarch instead of flour.
- You can also use bone-in chicken pieces for this recipe. You may want to increase cooking time by 1-2 hours if you use bone-in chicken.
- I used my Ninja 6 quart slow cooker. I like this slow cooker because it has a stovetop function which allows me to saute the shallot directly in the slow cooker.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

I served mine over rice, which may have absorbed some of the flavor as it was a little bit bland but easy to add either hot sauce, soy sauce or more pepper. I am going to make it again. I liked it.

So disappointed! I made this to the letter of the recipe but the sauce is bland and greasy with very little flavor and it is not creamy at all. I’ll shred the chicken for another recipe but I won’t be making this one again.
