Instant Pot “Everything” Chicken Casserole–an easy dump and go chicken and rice dish flavored with “everything bagel” seasoning.

Instant Pot “Everything” Chicken Casserole
If you’ve had an “everything bagel” you know how awesome the seasoning is on top of the bagel. It’s poppy seeds, sesame seeds, onion, garlic and salt. It’s a combination that gives anything it’s put on (think avocado toast) lots of flavor!
This chicken and rice dish has the addition of everything bagel seasoning. You can pick it up at most any grocery store or on amazon*. In addition to the seasoning the chicken and rice is flavored with worcestershire, lemon juice, cream cheese, sour cream and then a buttery Ritz cracker topping.
To speed up the process I used rotisserie chicken in this casserole. Probably the best deal you can buy these days is a rotisserie chicken from Costco. It costs around $5. You can’t even buy a whole, uncooked chicken for that price. Let alone the fact that it is cooked and seasoned to perfection and ready to enjoy the moment you get home. Buy two next time you go! Eat one for dinner and take the meat from another one and use it in another recipe like this chicken casserole! If you can’t get to a Costco then you can make this basic seasoned shredded chicken recipe in your Instant Pot at home.
Ingredients/Substitution Ideas
- Chicken broth or water and 2 teaspoons of better than bouillon
- Converted or white rice
- Dried minced onion or ½ teaspoon of onion powder
- Lemon juice
- Worcestershire sauce
- Cooked, chopped chicken (I used rotisserie chicken from Costco) or 1 pound raw chicken cut into bite size pieces
- Everything Bagel Seasoning (I use McCormick’s brand)
- Cream cheese or 1 (10.5 oz) can cream of chicken soup
- Sour cream
- Ritz crackers or club crackers
- Butter
Steps
Pour chicken broth into Instant Pot. Sprinkle in the rice. Add in the onion, lemon juice, worcestershire, chicken, everything bagel seasoning. Place the cream cheese on top of the chicken (my chicken was cooked but frozen), don’t stir it in (this will prevent the burn error message).

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove lid.

Stir in the sour cream.

In a bowl, stir together the Ritz and the butter. Sprinkle a few shakes of Everything Bagel seasoning into the cracker mixture.


Sprinkle the crackers over the rice and chicken. Place an air fryer lid on top and air fry for 3 minutes at 400 degrees or until topping is browned. (If you don’t have an air fryer lid you can scrape the rice and chicken mixture into a 9×9 inch pan and cover with the cracker mixture. Then bake in the oven at 350° F for 15 minutes).

Serve and enjoy!


Notes/Tips
- Serve with some green salad or roasted broccoli. Another idea is to add some steamed broccoli florets (or another vegetable like peas, spinach, etc.) into the Instant Pot when you stir in the sour cream for an all-in-one-pot-meal.
- I used my Duo Crisp 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.
- Other recipes you can make with Ritz crackers are Cracker Barrell Broccoli Cheddar Chicken (Instant Pot Or Crockpot) and Instant Pot Ritz Chicken.
- Can I use another type of rice? Yes you can. Use the liquid to rice ratio and the cooking time listed in the green chart below. If you use brown rice you can use uncooked frozen chicken breasts or thighs. Do not cut them up.
