Dump and Bake Kentucky Hot Brown Casserole--an easy dinner made with rotini pasta, tender chicken, crispy bacon, diced tomatoes and Alfredo sauce. Make it in the Instant Pot or oven for a yummy family meal!

Dump and Bake Kentucky Hot Brown Casserole

This dinner is inspired by the Kentucky hot brown sandwich (a sandwich made with turkey, bacon, tomatoes and a creamy sauce). I used chicken because that’s what I had on hand but leftover turkey would be ideal. This dinner is a dump and go recipe (you know I love those!). Greg and I both loved this easy pasta and it makes quite a bit so you can feed a crowd or have leftovers. (I’ve adapted this recipe from The Seasoned Mom.)

Ingredients/Substitution Ideas

  • Chicken broth–or Better than Bouillon chicken base
  • Rotini pasta–or medium shells, cavatappi or penne
  • Garlic powder
  • Diced tomatoes–or fire roasted tomatoes for more flavor
  • Alfredo sauce–I used Bertolli Creamy Basil Alfredo sauce
  • Cooked chicken or turkey–rotisserie chicken works great and saves time
  • Bacon crumbles
  • Shredded Parmesan cheese
  • Shredded mozzarella cheese–or an Italian cheese blend

Steps

You can make this recipe in the Instant Pot or dump and bake in the oven. Here, I’m showing how to make it in the IP.

Add broth into Instant Pot. Sprinkle in the rotini and garlic powder to Instant Pot. Dump the tomatoes and alfredo sauce on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the chicken, bacon, parmesan and mozzarella.

Serve and enjoy!

Notes/Tips

  • Serve with Caesar salad, roasted broccoli, peas, green beans or garlic bread.
  • Rotisserie chicken is a great shortcut! Grab a rotisserie chicken from Costco or Sam’s and chop or shred the meat. You can also use leftover cooked turkey.
  • Use your favorite Alfredo sauce. I used Bertolli Creamy Basil Alfredo sauce and loved the extra basil flavor. Regular Alfredo or roasted garlic Alfredo would also work.
  • Next time I make this, I’m going to add sliced mushrooms. You can use fresh mushrooms or drained canned mushrooms. For the oven version, stir them in before baking. For the Instant Pot, add them on top of the pasta before pressure cooking.
  • Sprinkle some chopped fresh basil over the top right before serving. It adds a pop of color and freshness.
  • Try adding in spinach. Stir in a couple handfuls of baby spinach at the end.
  • You can cut this recipe in half. It leaves a half can of tomatoes and a half jar of alfredo unused though so that’s not ideal.
  • Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.
  • Other recipes you can make with bacon crumbles are Loaded Overnight Breakfast Casserole and Instant Pot Ultimate Chicken Casserole.
  • Tools:
    • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
    • 9×13 inch pan*
    • Magnetic measuring cups*
    • Magnetic measuring spoons*
    • Glass measuring cup*
    • Can opener*
    • Digital kitchen scale* (good for measuring ingredients like pasta)
